Raisin Bran Muffins?  Seriously?

Who have thought Raisin Bran Muffins would be amazing?  When someone told me I should try them, I thought they were crazy.  But wow, was I wrong!  I love raisin bran.  Ever since I was a kid, I’d eat a big bowl of it covered in sugar and milk.  As I grew up, I nixed the sugar, but I still love my Raisin Bran.  Now, I’m making Raisin Bran Muffins instead of just a bowl of cereal, and I can eat it on the go!  How amazing is that?

While wet, soggy cereal isn’t something you usually want to eat, it works great in Raisin Bran Muffins.  Soaking the cereal in milk for a few minutes will soften the cereal, making it blend right in to the muffins.   Add a few simple ingredients to it, and you have amazing muffins that are filling, tasty, and you’d never guess were pretty good for you.  Adding a sugar and cinnamon topping makes them just like ones you’d find at your favorite bakery.

Amazing Raisin Bran Muffins ~ Yeah, You Read That Right!


  • 1 1/4 C flour
  • 1/2 C raw or white sugar
  • 1/2 t salt
  • 1 T baking powder
  • 3 C raisin bran cereal
  • 1 1/4 C milk
  • 1 egg
  • 1/4 C vegetable oil
  • 2 T raw or crystal sugar
  • 1 t cinnamon


  1. Heat oven to 350 degrees F.
  2. In a large bowl, place the milk and cereal. Mix to coat. Set aside.
  3. In a small bowl, mix the flour, 1/2 cup of sugar, salt, and baking powder. Set aside.
  4. Add the egg and oil to the wet cereal. Mix well.
  5. Add the dry ingredients to the wet cereal mixture. Stir until completely incorporated and wet.
  6. Fill paper lined muffin tins 2/3 full.
  7. Mix the remaining sugar and cinnamon. Sprinkle over the tops of the muffins.
  8. Bake for 25 minutes or until a toothpick in the center comes out clean.
  9. Serve with milk or your favorite breakfast beverage.

Freezing Raisin Bran Muffins and Bake Sales

Raisin Bran Muffins are great to make in large batches and freeze for later, which I love to do.  Let them cool completely, then place them in large plastic zippy bags and squish out all the air.  Freeze them up to 3 months in a deep freeze.  When you bring them out, you will have beautiful muffins that are just like fresh baked.  With bake sales, simply place them in zippy bags, however many you like, and they will go like hotcakes!  I always attach a recipe card to them.  I’ve noticed that putting a little card on them seems to make them  sell faster because people know if they like them, they can make them at home.  Plus, they know I made them from scratch, not from a box.
