Fresh Apples Make Apple Cinnamon Muffins Fabulous

I start out with fresh apples in Apple Cinnamon Muffins to give them that perfect apple flavor that I love.  The variety depends on my mood.  Granny Smith apples give the muffins a slightly tart bite and hold up well to baking.  A Cortland or MacIntosh will baking into the apple and give a sweet flavor that enhances the cinnamon.  Honey crisp apples will impart that wonderful honey-like flavor as well as stay slightly crispy in the baking process.  Use your favorite apples for an Apple Cinnamon Muffin that you will want more of everyday.

Apple Cinnamon Muffins


  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 3 teaspoons baking powder
  • 1 1/2 teaspoons ground cinnamon, divided
  • 1/2 teaspoon salt
  • 2 eggs
  • 3/4 cup milk
  • 1/2 teaspoon vanilla extract
  • 1 apple, peeled, cored, and finely chopped (about 1 cup) (use a granny smith apple for less sweetness)
  • 6 tablespoons butter, melted
  • 1/3 cup chopped walnuts
  • 1/4 cup packed brown sugar


  1. Preheat oven to 375 degree F. Coat a 12-cup muffin tin with cooking spray or line with a cupcake liner.
  2. In a large bowl, combine flour, granulated sugar, baking powder, 1 teaspoon cinnamon, and the salt; mix well.
  3. Form a well in the middle of the flour mixture, add eggs and milk and mix to combine but don't include the flour mixture.
  4. Add the chopped apple and melted butter to the milk and eggs mixture. Stir all of the batter together quickly, just until all of the flour is wet. You don't want to over-mix. (Batter will be very stiff.)
  5. Fill muffin cups 2/3 full with batter, distributing evenly.
  6. In a small bowl, Combine walnuts, brown sugar, and remaining cinnamon; mix well. Sprinkle nut mixture evenly over batter.
  7. Bake for about 20 minutes, or until a toothpick inserted in center comes out clean. (Check at about 16 minutes to be sure you don't over-bake)
  8. Immediately remove from muffin tin. Serve warm.

Making Apple Cinnamon Muffins for the Freezer

When I find apples on sale or especially fresh, I buy extras and make batches upon batches of Apple Cinnamon Muffins.  Once they are completely cooled, I wrap them individually in plastic wrap, then place them in a big plastic container that seals tight.  Into the freezer they go!  When I want a bit of Apple Cinnamon Muffins goodness, I grab one and warm it in the microwave on half power for about a minute.  It makes them perfectly warm and delicious and I don’t have to wait for the oven!  Apple Cinnamon Muffins are a great way to have your favorite apple flavor at your fingertips.
