I just had the opportunity to review quite a few items from the Newman’s Own Organics food line.  I was so excited.  I had the Extra Virgin Olive Oil and the Balsamic Vinegar in the box! Seeing those there SCREAMED at me, “make a Caprese Salad”.  This salad is so simple to make, yet the final product is so dang delicious that you will want it everyday during the summer.   And why not.  It is so good for you too.

So, I started –

Here is what you need to make a FAB Caprese Salad:

caprese salad ingredients

2 Large Beefsteak Tomatoes (you can use smaller tomatoes if you would like, but I really like the largest and most round tomato for this)
1 Pound of Fresh Mozzarella (the softer and fresher the better)
20 leaves of Basil
6-8 Large leaves of a leafy green lettuce
3 Tablespoons of Newman’s Own Organics Balsamic Vinegar
1 Tablespoon of Newmon’s Own Organics Extra Virgin Olive Oil
Salt to taste
Fresh Cracked Black Pepper to taste

1. This is very simple.  Assemble the salad by laying down a layer of the fresh lettuce covering the plate.
2. Slice the tomatoes, thin, but not too thin.
3. Slice the Fresh Mozzarella
4. Lay the slices of tomato down on top of the lettuce leaves
5. Slip sliced Mozzarella between the slices of tomato
6. Top with leaves of Basil
7. Drizzle Balsamic Vinegar and Extra Virgin Olive Oil on top
8. Sprinkle with Black Pepper and Salt.

Very simple, but looks amazing.  I have to admit, I was making this salad plate to be served with dinner.  I ate the entire plate.  Yes, it was THAT good.

Everything I received from Newman’s Own Organics was delicious.  Of course, my favorites were the oil and vinegar.  But that was followed by a very strong second place.  The Spelt Pretzels are so good, I don’t want to eat just one.  I put these in my girls lunches too.  They love them (even more than they do the regular wheat pretzels).

Newman’s Own Organics also has a cookie that is CRAZY good.  It is called the Newman-O’s.  It is kinda like the famous sandwich cookie that we all got used to eating.  You know the one, that we take apart and eat the cream and then dunk the chocolate cookie part.  Yeah, it is kinda like that.   ONLY BETTER!  Oh no I didn’t just say that!  Yes, I did!  I like these better than the ones I grew up eating.  The cookie part tastes fresher to me.  And, because I love mint, I suppose, I really like the Hint-O-Mint Newman-O’s.  They aren’t too minty.  You won’t feel like you just ate toothpaste.  These have just a hint of mint, wow, maybe that is why they named them Hint-O-Mint.  :)

Since I loved these products the most from the assortment, Newman’s Own Organics is going to give these away to one lucky reader!  All you need to do is enter on the Rafflecopter below.  One lucky entrant will receive:
