You can make them for one or you can make them for a crows  and either way you do it, it’s a delicious start to your day.  I always try and keep some thick cut bacon and some kind of soft cheese,whether it be goat cheese or feta cheese, in the refrigerator for a quick morning breakfast. To make a Bacon and Goat Cheese Omelette that you absolutely love, start with ingredients that you enjoy. I love a thick cut applewood smoked bacon. Anytime it goes on sale at my favorite grocer’s meat counter, I usually pick up a couple of pounds to freeze. That way, I can keep some thawed in the refrigerator for morning breakfast such as Bacon and Goat Cheese Omelette. Goat cheese has a uniquely tangy flavor. I love a plain goat cheese, but also herbed cheese is delicious. Choose a goat cheese, or even a feta cheese, that you love the flavor of. It will add a surprising flavor to the old omelette stand by. Eggs, whether you get to the grocery store or local farm stand, should be fresh for the best Bacon and Goat Cheese Omelette. And anytime I make an omelette, I add just a little bit of milk or half n half to make the eggs a little creamier and a little fluffier.

Bacon and Goat Cheese Omelette Recipe – Brunch is Served

Ingredients

  • 3 strips bacon, cut into pieces
  • 3 eggs
  • 3 T half n half
  • ¼ C crumbled goat cheese

Instructions

  1. Fry the bacon in a non-stick skillet over medium heat until crispy. Remove from pan to a paper towel, leaving the drippings behind.
  2. In a bowl, whisk the eggs and half n half, until well blended.
  3. Pour into hot pan with bacon drippings. Cover and cook over medium heat until eggs start to look dry on the top.
  4. Sprinkle the goat cheese and bacon in the center of the eggs.
  5. Fold one side over the toppings and slide out of the pan, folding the other side over the omelette.
  6. Serve hot.

Making Bacon and Goat Cheese Omelette for a Crowd

Making Bacon and Goat Cheese Omelette for a crowd is pretty easy.  You can either make an omelette for each person, or use the same amount of ingredients, multiplied by however many people you have, then add the eggs to a well greased baking dish, sprinkle with the crispy bacon and goat cheese, then bake at 375 until a knife inserted into the center comes out clean, which is around 30-45 minutes.  It will be an awesome casserole that your guests will come back for more.  Whether it’s for one or for many, Bacon and Goat Cheese Omelette is my favorite easy breakfast.
