What’s Better than a Bacon Trifle

Nothing! Well, very little. A friend was traveling and posted a picture of bacon parfaits she found at a restaurant. The description was minimal, but the picture looked amazing. I couldn’t find any parfait glasses, but I have a great trifle dish. I took a stab at Bacon Trifle and it was beyond amazing. Homemade barbecued beef, care of my favorite slow cooker, mashed potatoes, cheese, and lots of bacon made for a fantastic dinner that all I needed was a veggie side. It didn’t take long to assemble, and the whole family loved it. Bacon Trifle gets points for flavor as well as presentation.

Making Bacon Trifle

I started out my Bacon Trifle by slowly cooking an Eye of Round roast in my slow cooker with a half of a bottle of my favorite barbecue sauce and a half of a bottle of beer. The alcohol cooks off, but leaves the meat tender and full of wonderful flavor. For the bacon, choose a variety that you love to eat on its own. For me, that’s a thick cut pepper bacon that I get at my butcher. The pepper added quite a bit of flavor and a bit of bite to the Bacon Trifle. I made my own homemade mashed potatoes with a bit of butter and half and half. With all the flavor of the meats, I chose not to add salt and pepper to the mashed potatoes. Cheddar cheese is the final ingredient, although I could see using a pepper jack or even a Swiss in Bacon Trifle.

  • 1 2-3 lb beef roast
  • ½ bottle barbecue sauce
  • ½ bottle beer
  • 1 lb bacon, cooked crispy
  • 2 lbs potatoes, peeled and diced
  • 3 T butter
  • 2 T half and half or milk
  • 2 C shredded cheddar cheese


  1. Place the beef roast in a small slow cooker. Add the barbecue sauce and beer. Cover and turn to low for 6-8 hours.
  2. When the beef is fully cooked, shred, removing any fat, and place the lean meat back in the barbecue sauce.
  3. Place the potatoes in a pot and cover with water. Boil until tender. Mash with butter and half and half.
  4. To assemble, crumble half of the bacon.
  5. Layer (3 times) in your trifle dish in the following order: potatoes, cheese, beef, bacon. Top with potatoes and cheese.
  6. Add strips of bacon around the top and serve hot.

Bacon Trifle in a Flash

If you are short on time, you can still make Bacon Trifle. Your favorite grocery store has all of the ingredients, premade and ready for you to use. Barbecue beef and mashed potatoes can be found with the other premade dinner entrees, such as Bob Evans products. Bacon only takes a few minutes to bake, but you can also find precooked bacon to use in Bacon Trifle. It doesn’t have to take a lot of effort to make Bacon Trifle, so make it the way your schedule allows!
