Bacon Wrapped Chicken Rollups are ambrosia.  They must be.  Asparagus and Swiss cheese, rolled in chicken breasts, wrapped in bacon.  There can’t be another word for that other than ambrosia.  As the bacon cooks, it imparts that smoky flavor we’ve come to love deep into the meat of the chicken, leaving it exceptionally moist and tender.

Tips and Tricks for Bacon Wrapped Chicken Rollups

As amazing as Bacon Wrapped Chicken Rollups looks, it’s not hard to make.  But there are a few tricks to get them to turn out beautifully.  Slice the chicken breasts when they are partially frozen.  They will slice easily and evenly.  Place one in a plastic zipper bag and pound flat with a frying pan for ease in rolling them.

When choosing your bacon, choose one you enjoy the flavor of, such as a pepper or applewood smoked.  Thicker bacon works better, but a regular slice will work if that’s what is available.  I love a good thick pepper crusted bacon I get at my local meat counter.  It’s smoky spicy flavor makes a great addition to Bacon Wrapped Chicken Rollups.

Bacon-Wrapped Chicken Rollups


  • 4 chicken breasts, boneless and skinless
  • 12 spears asparagus, rinsed, dried, and cut ends trimmed
  • 4 slices natural Swiss
  • 12 slices bacon


  1. Heat oven to 400 degrees F.
  2. Slice a chicken breast through the meatiest part as shown below.
  3. Place the sliced chicken breast, open, in a plastic zippy bag and seal. Pound flat with a frying pan or meat mallet, until it's an even thickness. Repeat with the remaining chicken.
  4. Lay a piece of chicken, cut side up, on a flat surface. Arrange Swiss and asparagus.
  5. Roll up the chicken around the filling.
  6. Starting at one end, wrap the bacon around the chicken, stretching it slightly to hold the roll together. Wrap a total of 3 pieces around the chicken. End with the strip on the bottom to hold it in place.
  7. Place in a 13x9 baking pan and cover with aluminum foil.
  8. Bake for 1 hour. Remove foil and bake another 15 minutes, until bacon is crisp.

Bacon Wrapped Chicken Rollups ~ Freeze Them!

I’m the kind of person that if I’m making a few, I might as well make more and put them in the freezer for later meals.  This is one of those dishes!  Simply place the prepared Bacon Wrapped Chicken Rollups on a parchment covered baking sheet and freeze.  Once they are frozen, transfer them to a zippy bag or freezer container.  When baking them, allow for extra baking time to ensure the center cooks completely.

Amazing doesn’t quite describe how good Bacon Wrapped Chicken Rollups taste.  They were the perfect blend of savory, tasty, and salty, all rolled up in an easy to bake package.  I served these with some aged cheddar mashed potatoes and wow’ed my guests.  So, next time you want something fancy without the hassle, make up some Bacon Wrapped Chicken Rollups!
