Ok, so it’s not really sushi, but it is amazing and it has BACON!  Barbecue Bacon Sushi is nothing short of amazing.  For the strict carnivore, it has everything that makes you hungry: thick cut bacon, seasoned ground beef, and of course, a gooey, cheesey center.  It’s serious eats for seriously hungry people.  It is easy to make, and Barbecue Bacon Sushi is perfect for your summer parties or big sports games.  They even travel well for tailgating!  You can make Barbecue Bacon Sushi up in advance and have them ready for your grill at a moment’s notice.

Fresh Ingredients in Barbecue Bacon Sushi

Barbecue Bacon Sushi starts at it’s core with Jarlsberg cheese, cut in strips like a cheese stick.  If you’ve never tried Jarlsberg (the “J” is pronounced as a “Y”), it is similar to a good Swiss cheese, with a nuttier flavor, which is perfect with the barbecue.  The next layer is fresh ground beef mixed with your favorite barbecue rub.  This layer gives the Barbecue Bacon Sushi it’s body, and adds to the smokey goodness of the dish.  Wrapped around out outside of the Barbecue Bacon Sushi is bacon.  Thick cut, I use pepper bacon to add a bit of spice.  Use a bacon that you prefer.  Thicker cut bacon works best.  All of this goodness is then basted with your favorite barbecue sauce as it cooks, either in a roasting pan or on the grill.  Your result is a Barbecue Bacon Sushi that everyone will love and ask for.

1 lb thick cut bacon
1 ½ lb lean ground beef
¼ C barbecue rub
¼ lb Jarlsberg cheese, cut into long strips, ½” thick
½ bottle barbecue sauce, any variety

In a bowl, mix the ground beef and barbecue rub  Set aside.
Lay plastic wrap on a flat surface, such as a cutting board.

Lay the bacon strips, sides touching, next to each other.

Press ground beef in an even layer across the bacon, leaving a 1 inch section at the end.

Place the cheese at the end of the bacon that has beef.  Using the plastic wrap, roll the meat like sushi, keeping it tight to the previous layer.

If grilling:
Place the bacon sushi on a warm grill with indirect heating.  Grill and turn occasionally to prevent burning, for 15-20 minutes.  Baste with barbecue sauce, caramelize, and remove when no pink remains in the center, about 30 minutes.

If baking:
Place a rack on a baking sheet.  Top with the bacon sushi.  Bake in a 400°F oven for 20-30 minutes, turning occasionally.  Baste with barbecue sauce and bake until caramelized.  Remove when no pink remains in the center, about 40 minutes.

Let bacon sushi rest 5 minutes and cut between the bacon slices.

Making Barbecue Bacon Sushi in Advance

It’s easy to have Barbecue Bacon Sushi any time you like it.  If you make up one batch, you might as well make up a double, right?  It will completely pay off with Barbecue Bacon Sushi.  Wrap it up tight with plastic wrap and slide it into a freezer zippy bag.  Off to the freezer with it, and when you want to grill it up, simply thaw and grill as usual!  You’ll have a perfect batch of Barbecue Bacon Sushi any time you want it!
