Black Bean Quinoa Muffins

Over the past few days, we have been looking at Superfoods and trying to incorporate them into your everyday diet.  This is one of my FAVORITE ways to incorporate 2 Superfoods.  That is right…these muffins incorporate TWO Superfoods.  It incorporates Black Beans and Quinoa.

Health Benefits of Black Beans?

According to, Black Beans can help regulate blood sugar, improve cardiovascular health and helps your digestive tract.  They even assert “Given the impressive array of antioxidant and anti-inflammatory phytonutrients in black beans, we have not been surprised to see numerous studies connecting black bean intake with reduced risk of certain cancers, especially colon cancer.”   Given this information, including more black beans in my diet makes sense.

Health Benefits of Quinoa?

According to again, the benefits of Quinoa start with these tiny little grains being packed with protein.  There are also signs that Quinoa may have anti-inflammatory properties.  That alone is worth it being added to my diet.


Black Bean Quinoa Muffins

Black Bean Quinoa Muffins


  • 2 Cups Water
  • 1 Cup Quinoa (I prefer rainbow Quinoa or Red Quinoa)
  • 4 Eggs, lightly beaten
  • 1 Cup of Canned Black Beans (Rinsed)
  • 3/4 Cup Cottage Cheese
  • 1/4 Cup Green Onion, sliced
  • 2 Tablespoons all purpose flour (or use equivalent gluten free flour to keep these muffins gluten free)
  • 1 teaspoon baking powder
  • 1 teaspoon ground cumin
  • 1/4 teaspoon of salt (Plus a pinch to be used in the cooking of the quinoa)
  • 1 cup of shredded pepper jack or your favorite melting cheese
  • Sides/Toppings
  • Your favorite salsa
  • Lime Juice
  • Avocado


  1. Preheat Oven to 375 degrees
  2. Prepare a muffin to for 12 - 16 muffins, by spraying with nonstick spray. I had run out of nonstick spray and decided to use cupcake liners. This worked very well, but I didn't get the 'crust' that I would have developed had I been able to put the batter directly into the pan.
  3. Bring water to boil in a pot on the stove. Once boiling, add the quinoa and a pinch of salt and cook for about 15 minutes or until the spirally germ comes out of the quinoa.
  4. Once cooked, transfer to a large bowl and let it sit for 10 minutes to cool down.
  5. Add Eggs, cottage cheese, beans, green onions, salt, cumin, flour and baking powder to the quinoa and combine well.
  6. Immediately fill the muffin tin cups 3/4 full.
  7. Top each muffin with a pinch of the shredded cheese (approximately 1 tablespoon)
  8. Bake at 375 for about 20 minutes or until they puff slightly and get golden brown on top.
  9. Remove from oven and let stand at room temperature for about 5-10 minutes to finish firming up.
  10. Enjoy with fresh salsa, lime juice and avocado

These tasty muffins remind me so much of Mexican corn cakes, but without all the starches.  You will be amazed at how awesome the flavor is.  The texture is so soft almost like a cornbread muffin.
