Bruschetta Stuffed Chicken has few ingredients, but full flavor. Chicken breasts are the base of the dish. I purchased split breasts and removed the skin and bones myself. I found a great sun dried tomato bruschetta that has a rich, scrumptious flavor my family loves. I drain it a little so that the final dish isn’t oily. Smoked provolone melts perfectly in the dish, and is a staple for stuffed chicken. Once the chicken is stuffed, a breading of egg and panko bread crumbs makes the dish crispy crunchy and absolutely amazing! A quick trip through the oven and you’ll have a wonderful dinner that everyone will love.

Bruschetta Stuffed Chicken

Ingredients

  • 4 boneless skinless chicken breasts, pounded flat
  • 4 slices provolone
  • 1 jar bruschetta topping
  • 2 eggs, whisked
  • 2 C panko bread crumbs

Instructions

  1. Heat oven to 375°F.
  2. Place the chicken breasts on a flat surface.
  3. Place a slice of provolone on each chicken breast.
  4. Spread the bruschetta over the cheese and roll up the chicken.
  5. Coat the chicken in the whisked eggs then roll in the panko bread crumbs.
  6. Place on a greased baking sheet.
  7. Bake in heated oven for 35-45 minutes, until golden brown and chicken is cooked through.
  8. Serve hot.

Making Bruschetta Stuffed Chicken Ahead

You can make Bruschetta Stuffed Chicken ahead and either hold it for a day before baking it or even freeze it for later. The trick is to not dredge it in egg and panko bread crumbs. Freeze the Bruschetta Stuffed Chicken on a parchment lined baking tray until solid, then place in plastic zippy bags or use a food sealer. When you want to bake them, you can bread them thawed or frozen for easy baking. If you bake them frozen, add 5 to 10 minutes to the baking time to make sure the center is completely cooked through.
