I remember is a little girl going to recipes with my mother in finding the recipe cliped from the newspaper for Cake Mix Cookies. The paper was old and yellow but it had an interesting recipe on it for cookies made from a cake mix. I asked my mom where it came from and she didn’t know but that recipe always kind of stuck with me because it was so easy. Later on I needed a recipe for a bake sale and thought of the Cake Mix Cookies as a great idea. So I grab the recipe and a couple boxes of cake mixes from the pantry shelf and said to work. Within minutes I had a beautiful dough that was easy to work with and fast to bake.

Any commercially prepared cake mix that you find the grocery store works fantastic with Cake Mix Cookies. As long as you like the flavor of the cake you will love the cookies. Because they don’t get as fluffy as a cake, the flavor is enhanced in the smaller shape . Cake Mix Cookies Recipe ~ Cookies in Minutes!

Ingredients

  • 1 box cake mix, any variety
  • 2 eggs
  • ½ C oil
  • Frosting, if desired

Instructions

  1. Heat oven to 350 degrees F.
  2. Mix all ingredients until a thick dough forms.
  3. Drop by heaping teaspoons onto an ungreased cookie sheet.
  4. Bake 10-12 minutes, until slightly firm.
  5. Remove from cookie sheet to paper toweling. Allow to cool.
  6. Frost if desired.

Freezing Cake Mix Cookies

I love buying cake mixes when they’re on sale and making up batches and batches of cake mix cookies. Instead of frosting them, I’ll let them cool, place them in plastic zippy bags and freeze. They’ll stay in a kitchen freezer for about a month or a deep freeze for about 6 months. When you want to serve them, take them out and place them on a plate.
