Good gingersnaps are hard to come by.  They are also a little time-consuming to make from scratch.  (Mostly because the molasses jar is sealed shut so tight from one little drop on the lip somewhere!)  While I don’t usually mind the time it takes to make something, when I found Cake Mix Gingersnaps, I vowed I’d never go back.  All it takes is a few simple ingredients, a store-purchased cake mix, and about 30 minutes.  It’s that easy.  The Cake Mix Gingersnaps come out crispy, spicy, and perfectly delicious, right from your oven.  They have a bit of a chewiness right out of the oven, but as soon as they are cool, they are crispy as a snap should be.

Few Ingredients for Cake Mix Gingersnaps

Your favorite gingerbread cake mix is front and center in Cake Mix Gingersnaps.  I use Betty Crocker, but I’ve also used a generic mix I get at a bulk food store.  They both worked amazingly.  Instead of making it as the box says for a cake, all you need is some water, some extra flour, and some oil.  It’s that easy.  I also roll the Cake Mix Gingersnaps in some coarsely granulated raw sugar for a bit of a crunch on the outside.  Just those few ingredients will make a Cake Mix Gingersnap that you will love.

Ingredients

  • 1 gingerbread cake mix
  • ¼ C hot water
  • 2 T flour
  • 2 T oil (I used olive)
  • Sugar for dusting

Instructions

  1. Heat oven to 375 degrees F.
  2. Mix the cake mix, hot water, flour, and oil until a thick dough forms.
  3. Roll dough into 1 inch balls. Roll in sugar then place on an ungreased cookie sheet.
  4. Press balls flat, about ¼ inch thick.
  5. Bake 8-10 minutes, until firm.
  6. Remove to paper towels to cool.
  7. Keep in an airtight container.

  1. I made a batch of cookies this weekend. One cookie sheet half batch burnt a little on the bottom so you really have to be careful to check the bottoms in addition to the sides when they are baking. It was not a bad burn though.The other batch came out very well and they were soft when they were warm. But the cooled cookies were very hard. I am a fan of chewier cookies so I prefer these cookies right out of the oven.

  10. Oh, this does save time! I like to make cookies from a mix when I need to bring treats to an event. I haven’t tried gingerbread yet. This is the time of year to look for the mixes in the stores though. Great idea!
