Nutritional Yeast Makes Cheesy Oven Roasted Cauliflower Amazing!

I saw a recipe that used nutritional yeast as a substitute for cheese on vegetables.  Now, I love my cheese.  A lot.  I could never go vegan because of that.  And bacon, of course.  But nutritional yeast was something I’ve never tried before, nor heard of.  So I did some research and found out that this “deactivated” (read in: killed with heat) yeast is actually really good for you!  Filled with B vitamins, and what’s considered complete protein, the flakes are delicious on things like popcorn, steamed or grilled veggies, and even garlic bread.  They add a nutty, cheesy flavor to everything you sprinkle them on.  If you’ve never used or seen nutritional yeast before, you can find it in the gluten free section of your store.  I love the Bob’s Red Mill brand because it’s easy to find.  Nutritional yeast is what makes this Cheesy Oven Roasted Cauliflower crispy and delicious!  I was leery of these odd little flakes, but after using them in Cheesy Oven Roasted Cauliflower, I’m sold!

Cheesy Oven Roasted Cauliflower Makes a Healthy Side Dish

Cauliflower is a great side dish on its own.  Add in nutritional yeast, and your table is graced with a beautifully browned dish that has a crispy, healthy coating that will even get your kids on board the cauliflower train!  It’s also an amazing dish to have on the table when you have guests over for dinner.  They will be surprised that the coating isn’t crispy melted cheese, and that it’s actually a vegan dish.

Ingredients

  • 1 head cauliflower
  • 1/2 olive oil
  • 1 C nutritional yeast

Instructions

  1. Heat oven to 425 degrees F.
  2. Cut the cauliflower into florets.
  3. Place the olive oil and yeast in shallow bowls.
  4. Dip the heads of the cauliflower in the oil to lightly coat.
  5. Coat with the yeast by dipping.
  6. Place on a baking sheet and roast 20-25 minutes, until tender when pierced with a fork.
  7. Serve warm.

Nutritional Yeast is Not Just for Cheesy Oven Roasted Cauliflower!

Once I’d tried the yeast on Cheesy Oven Roasted Cauliflower, I had to try it on other things too.  I’ve tried it on all kinds of things, like steamed veggies and white rice, but I think my favorite thing is definitely the popcorn.  Just a little bit of butter to hold the yeast on and a sprinkling of yeast, and my popcorn was taken from regular old popcorn to something amazing!

  1. This is one of my favorite dishes, hands down. There’s a less labor intensive way to do it, though – spray or drizzle your florets with oil in the roasting pan, toss, sprinkle on the yeast, and toss. Much less mess. I add Tony Chachere’s cajun seasoning with the yeast for a bit of salt and an extra flavor kick, but the yeast is really the star of the show, here! This is the only way my roomie’s son will eat cauliflower!
