Baking dinner in what you’re eating isn’t a new thing, but I’d never baked my dinner in a pumpkin.  Chicken Dinner in a Pumpkin is one of those dishes that you try with an open mind and are so very glad that you did.  Chicken, rice, and vegetables come together to make a delicious dish where you eat the dish with the dinner!  And by roasting the Chicken Dinner in a Pumpkin in the oven, you end up with sweet pumpkin flesh you can mix into the casserole style meal, giving it a wonderful earthy flavor that you just can’t get from other vegetables.

How to Make Chicken Dinner in a Pumpkin

While many recipes I found started with a rotisserie chicken, I started with two chicken breasts that I removed from the bones and cut into pieces. They were sauteed with carrots and celery, then simmered with a fantastic wild rice blend.  I could see Chicken Dinner in a Pumpkin coming together in the pan!  Once the rice turned soft, I cheated and added some canned soup for flavor, and of course, topped it all with fresh baby spinach.  Spinach paired with pumpkin is an amazing flavor combination that I adore, so another opportunity to bring it to the table had me excited.  I packed it all into a cleaned out sugar baby pumpkin and roasted it in the oven for about an hour for a fantastic dish that everyone loved.

  • 1 sugar baby pumpkin, seeds and strings removed
  • 2 T olive oil
  • 2 chicken breasts, bones and skin removed, cut into cubes
  • 2 ribs celery, diced
  • 2 carrot, sliced into coins
  • 1 C rice (wild rice blend works fantastic)
  • 1 ½ C chicken stock
  • handful baby spinach
  • 1 can creamy soup (such as mushroom, or chicken & mushroom)


  1. Heat oven to 375 degrees F.
  2. Place the pumpkin on a rimmed baking sheet and set aside.
  3. Heat a saute pan over medium high heat. Add the oil and chicken. Stir and saute until no pink remains in the center of the chicken pieces.
  4. Add the celery and carrots. Stir for 4 minutes.
  5. Add the rice and chicken stock. Reduce to low and cover. Simmer 10 minutes, until rice starts to soften and has absorbed the majority of the water.
  6. Add the baby spinach and soup. Stir well.
  7. Place in the pumpkin and fit the lid back on.
  8. Bake for 1 hour, until the pumpkin is fork tender when pierced.
  9. Serve hot.
  10. Serves 3-4.

Changing Up Chicken Dinner in a Pumpkin

While I made my Chicken Dinner in a Pumpkin with chicken, you could easily change it up with beef or pork as well.  You can use a cream of mushroom soup, or maybe change it up to a beefy onion or some other soup that you prefer as a sauce.  There are so many options with Chicken Dinner in a Pumpkin.  Use your creativity and come up with something that your family will love.  Chicken Dinner in a Pumpkin will become a fall and winter classic in your home.
