Chinese Buffet Buttered Potatoes for a Change

You never know what you’re going to find at a Chinese buffet.  Macaroni and cheese next to the peanut chicken, sweet rolls, an ice cream bar, and often Buttered Potatoes.  I’d always passed them up, going for more traditional Chinese fare, until a friend told me I HAD to try them.  They were roasted potatoes.  What could be so awesome?  I was hooked on the first bite.  Creamy, buttery, and crispy, they were the best potatoes I’ve ever eaten.  With a little ingenuity, I knew I could figure out the trick behind these amazing Buttered Potatoes.  It’s so simple!

Two Ingredients for Buttered Potatoes

I tried all kinds of ways of making Buttered Potatoes, thinking there must be some trick or weird something that makes these potatoes so amazing.  It was when I went simple that I found the real tricks.  First is your choice of potatoes.  For a creamy, delicious batch of Buttered Potatoes, I found using smooth skinned, “waxy” potatoes, such as Yukon golds or red potatoes worked best.  Peel them and cut them into bite sized pieces for the best results.  The second trick is that you need to use real butter.  I used salted, because of the potatoes.  But real butter is key.  Those are the only two ingredients you need for amazing Buttered Potatoes that are crispy and creamy!

  • 6-8 waxy potatoes, peeled and cut into bite sized cubes
  • 1 stick butter, cut into pieces


  1. Heat oven to 425°F.
  2. Place the potatoes on a baking sheet.
  3. Place the butter on the potatoes.
  4. Bake for 15 minutes. Turn the potatoes over gently.
  5. Return to oven and bake until potatoes are golden brown and crispy.
  6. Serve hot.

Toppings for Buttered Potatoes

At the Chinese buffet, I am pretty simple.  Just potatoes.  But when I make Buttered Potatoes at home, I start thinking about toppings.  Parmesan cheese is good for a simple topping, as is malt vinegar.  Melted cheese sauce, bacon, sour cream, and green onions make a batch of Buttered Potatoes into a loaded potato mess that is absolutely amazing.  Add your favorite potato toppings to Buttered Potatoes for a delicious side dish!
