Ingredients

  • 1 head iceberg lettuce, chopped bite sized
  • ½ greenhouse cucumber, quartered and sliced
  • ½ green pepper, diced
  • ½ red onion, sliced thinly
  • 1 roma tomato, sliced into 8 wedges
  • 8 oz feta cheese, cubed
  • ½ C kalamata olives
  • Dressing:
  • 1 C olive oil
  • ½ C red wine vinegar
  • ¼ C dried oregano
  • 1 t lemon juice
  • salt
  • pepper

Instructions

  1. Place lettuce in a large bowl.
  2. Arrange cucumber, pepper, onion, tomato, cheese, and olives on top.
  3. In a small bowl, mix the olive oil, vinegar, oregano, lemon juice, salt and pepper.
  4. Serve salad in individual bowls and ladle dressing over the top.
