Corned Beef Casserole for a Quick Weekend Breakfast

Corned Beef Casserole is a great weekend morning breakfast that takes just minutes to prepare, and about a half an hour to bake.  It puts a smile on your family, and if you are lucky enough to have leftovers, it’s great warmed back up for a weekday breakfast on the go.  The great thing is all the ingredients are things you can keep in your pantry, or basics from the fridge!  So you can have all the ingredients on hand when you want to make this dish in a hurry!

What Makes a Corned Beef Casserole?

If you’ve ever had an “Impossible Pie”, this is similar, but in square form, with really tasty ingredients.  If you haven’t, why not?  It’s like magic!  You mix Bisquick baking mix with milk and eggs, then pour it over your fillings.  When it bakes, it magically creates a crust, and turns into a dish that resembles quiche, but without the hassle of rolling out the crust.  It seems impossible, but it really happens!  Corned Beef Casserole started out as an impossible pie style dish, but expanded for a larger, hungrier group.  When sausage and bacon got boring, I grabbed a can of corned beef hash and created something a bit different.  My family loved it!  What should have fed 8, fed 4.  It was gone in a flash!

Corned Beef Casserole Recipe ~ A Simple Breakfast FAST!

Ingredients

  • 1 lg can corned beef hash
  • 1 lg onion, diced
  • 3/4 C Bisquick
  • 3 C milk
  • 6 eggs
  • 2 C shredded cheese

Instructions

  1. Heat oven to 400 degrees F.
  2. Spray the bottom of a 13x9 inch pan with cooking spray.
  3. Place the corned beef hash in the bottom of the pan, spreading it out.
  4. Top with onions.
  5. Sprinkle the cheese over the top.
  6. In a bowl, mix the Bisquick, milk, and eggs. Pour over the top of the beef and onions.
  7. Bake in preheated oven for 30-35 minutes, until a knife inserted in the center comes out clean.
  8. Serve warm.
