Country Chicken and Biscuits – Anytime You Want It!

Country Chicken and Biscuits is a time-honored recipe that is not only fantastic for dinner but makes a delicious breakfast as well. With a little forethought (or maybe cheating and getting a chicken out of the deli) you can have this to your table in no time. I like to make my chicken a day ahead, roasting it in the oven or the crock pot, so when I go to assemble this meal it’s fast and a family favorite. Another thing about Country Chicken and Biscuits is you can make it gluten-free and tasteful without sacrificing any flavor or texture.

When I cook, I use a lot of cheats. They’re time savers in and of themselves, plus they add great flavor to what you’re cooking.  Roasted chicken base (or any flavor) is a great thing to have on hand.  Sometimes meat doesn’t give you enough juice for gravy.  I stir in a tablespoon or two of roasted base, add a little water, and POOF!  Instant juice for gravy.

 I made my gravy with tapioca starch, which makes it a little clear compared to flour, but the flavor is still rich and tasty.  It takes less time to thicken, and is great for anyone that comes over that needs gluten-free foods.  Biscuits come from a mix, such as Bisquick or Pamela’s baking mix.  Pamela’s is gluten-free and pretty darn tasty!  The ultimate cheat is in the deli.  Those rotisserie chickens are amazing and delicious.  You might not get juice with it for gravy, so use the chicken base and you are all set.  I add a tablespoon of butter to it so that it has fat to thicken.  Use your cheats to make Country Chicken and Biscuits and it will be on the table fast and easy!

Country Chicken and Biscuits Recipe

Ingredients

  • 3 C chicken drippings, or chicken base and water
  • 2 C chopped boneless chicken, skin removed
  • 3 T tapioca starch or flour
  • 1 recipe biscuits (refrigerator, box mix, or homemade)

Instructions

  1. Following the directions on the package, make the biscuits and set aside.
  2. Heat the chicken drippings until steaming.
  3. Whisk in the starch or flour, continue whisking as the mixture thickens.
  4. Add the chicken, and heat through.
  5. Serve hot over biscuits.

Tired of chicken?  Yeah, I get that way too sometimes.  Making this with beef is just as amazing!  For breakfast, lunch, or dinner, it is fantastic.  If you have leftovers, that’s perfect!  Warm the gravy, add chopped meat, and veggies if you like, and there’s a meal in minutes.  It truly is a great way to use up those pesky leftovers that no one wants to eat.  So round up those leftovers or stop in the deli and make some Country Chicken and Biscuits!
