Sausage Gravy and Biscuits for a Hearty Country Breakfast

Sausage Gravy and Biscuits make for a hearty breakfast that soothes the soul and fills the stomach.  It’s a beautiful and simple Southern dish that is perfect by itself for breakfast, or on a breakfast buffet with other fun and delicious breakfast treats.  Large fluffy biscuits are smothered in a rich creamy gravy filled with crispy bits of sausage.  I’ve even seen it topped with shredded cheese, which adds another dimension to the dish.  It can be made in a mere 30 minutes or so, including making the biscuits, so it’s great for a quick breakfast on a weekday or weekend.

Making Sausage Gravy and Biscuits Even Better

Using a quality sausage with lots of bold flavor can make Sausage Gravy and Biscuits amazing.  I love using a sage sausage, such as Bob Evans Sage, or even making my own from ground pork, salt, pepper, and sage.  It’s delicious, and adds a rich flavor to the gravy.  While I start my gravy with butter, I always add in the sausage drippings to add even more flavor.  It takes the dish from delicious to phenomenal in 2 seconds flat.  The last flavor booster for this hearty dish is ground black pepper.  Using a coarser grind in this dish adds spice and a bit of heat that rounds out the creamy gravy and makes it pop.

  • 1 lb loose breakfast sausage
  • 1/2 C (1 stick) butter
  • 3 T flour (or rice flour)
  • salt/pepper
  • 3 C milk
  • 2 1/3 C Bisquick baking mix
  • 2/3 C milk


  1. Brown the breakfast sausage. Do not drain.
  2. Make the biscuits according to the package directions and bake.
  3. Melt the butter in a large saucepan over medium heat. When the butter starts to foam, add the flour and cook for 1 minute, stirring occasionally.
  4. Slowly add the milk, stirring continually. Heat to simmering. When the mixture thickens, add the browned sausage and stir well.
  5. Serve hot over biscuits.

I love to change up Sausage Gravy and Biscuits so it’s not the same old dish every time.  My favorite way to change it up is to fry up some eggs and place them over the top.  YUM!  Another fave is to saute up some diced bacon, which adds a fabulous flavor (it’s BACON!) to the mix and makes your family smile.  Anyway you make it, Sausage Gravy and Biscuits is an amazing breakfast that fills your tummy and keeps you going all day!
