Cranberry Brie Rangoon

Cranberry Brie Rangoon Snacks

A friend of mine recently brought over crab rangoon to share over lunch.  As I was munching on them, I thought of the chunk of brie that was in my refrigerator.  I often serve brie with fresh and dried fruits, including dried cranberries.  Cranberry Brie Rangoon formed in my head and then on my prep table.  Small cubes of brie, a smattering of dried cranberries, and a wonton wrapper became an amazing Cranberry Brie Rangoon treat, that I dipped in a hot jalapeno jelly.  It was the perfect appetizer and snack, and it was ready in minutes!

Making Cranberry Brie Rangoon

These snacks were so easy to make, I don’t know why I didn’t think of them before.  I picked up some fresh wontons in the refrigerated section of my grocery store.  For some reason, they are with the vegan things, as well as Asian.  The brie was a common brand, but you could use anything you want in these.  A good soft cheese, goat cheese, or even some hard parmesan would work well.  Craisins are a dried fruit that is always in my pantry.  They are awesome on salads, in trail mixes, or just as a handful of something tasty.  I used them whole, but I could see chopping them up finely for an easier time making the Cranberry Brie Rangoon.  A few minutes to assemble, then a quick run through the oven, and you have a fantastic treat!
