Veggies for Crock Pot Fajitas
Typical veggies for Crock Pot Fajitas are peppers and onions, but you can add anything that you love, that takes a bit to cook. Something like zucchini or summer squash would have to be added about an hour before serving so you don’t end up with mush. Somehow, I have a family that doesn’t like veggies in their fajitas, so I just used meat in the Crock Pot. - 2 lbs chicken, beef, or pork
- 2 bell peppers, sliced thick
- 2 onions, sliced thick
- 1 pouch Frontera Fajita Skillet Sauce
- Layer everything in a 3 qt Crock Pot.
- Cover and set to low for 6 to 8 hours.
- Remove meat from Crock Pot and shred, if desired.
- Serve with tortillas, guacamole, taco sauce, and sour cream.

There are a lot of different packets of fajita seasoning out there that you can buy. My absolute fave though is from Frontera. They have fantastic flavor that is fresh and works well with Crock Pot cooking as well as traditional pan cooking. You can find Frontera packets for fajitas, tacos, enchiladas, and guacamole at your local grocery store and also at Amazon. I buy these by the 6-pack because we use them for all kinds of things. I usually ignore the meat designation on the packet and use it for whatever I have. The medium fajita seasoning is what I used in these Crock Pot Fajitas, and it had the right amount of heat without being so hot that no one could eat them.
