Crock Pot Fajitas are an amazingly easy way to make fajitas for your family, with little effort but fabulously delicious results.  And, you can use whatever meat you want!  Chicken, pork, or beef all work well in Crock Pot Fajitas.  And the nice thing is you don’t have to worry about heating up cast iron and searing everything.  You can cook it all in the Crock Pot, making it a one dish wonder for dinner, and clean up is a breeze!  When you get ready to serve, you just need to pull out any sauces, extra veggies, and tortillas.  Instant dinner!

Veggies for Crock Pot Fajitas

Typical veggies for Crock Pot Fajitas are peppers and onions, but you can add anything that you love, that takes a bit to cook.  Something like zucchini or summer squash would have to be added about an hour before serving so you don’t end up with mush.  Somehow, I have a family that doesn’t like veggies in their fajitas, so I just used meat in the Crock Pot.  You can layer the meat and veggies, so the flavor really melds together and you have deliciousness in every bite.  Get creative with your veggies for the very best Crock Pot Fajitas.

  • 2 lbs chicken, beef, or pork
  • 2 bell peppers, sliced thick
  • 2 onions, sliced thick
  • 1 pouch Frontera Fajita Skillet Sauce


  1. Layer everything in a 3 qt Crock Pot.
  2. Cover and set to low for 6 to 8 hours.
  3. Remove meat from Crock Pot and shred, if desired.
  4. Serve with tortillas, guacamole, taco sauce, and sour cream.

The Perfect Sauce for Crock Pot Fajitas

There are a lot of different packets of fajita seasoning out there that you can buy.  My absolute fave though is from Frontera.  They have fantastic flavor that is fresh and works well with Crock Pot cooking as well as traditional pan cooking.  You can find Frontera packets for fajitas, tacos, enchiladas, and guacamole at your local grocery store and also at Amazon.  I buy these by the 6-pack because we use them for all kinds of things.  I usually ignore the meat designation on the packet and use it for whatever I have.  The medium fajita seasoning is what I used in these Crock Pot Fajitas, and it had the right amount of heat without being so hot that no one could eat them.  Make the family something fun and easy for dinner.  Crock Pot Fajitas will become a tried and true favorite!
