Crunchy Baked French Toast is a fabulously fresh take on an old favorite.  French toast is a common go-to on the weekends at my house, but I wanted to change things up a bit.  I had some cornflakes in my pantry, and thought that I used them all the time as a breading, how about as a breading to French toast?  Crispy, crunchy, and delicious, I took the next step and baked them.  Personally, I greatly dislike standing over a griddle, cooking breakfast, while my family chats and bonds while eating.  Crunchy Baked French Toast is the best of both worlds.  You get an amazing breakfast that you get to sit down and enjoy with your family!  Weekend mornings just got better!

Crunchy Baked French Toast Is My New Favorite

The basic idea of French toast is the basis of Crunchy Baked French Toast.  Eggs, milk, and cinnamon start out the dish, with a dash or two of vanilla.  I also add a tablespoon of maple syrup to the batter, giving Crunchy Baked French Toast a wonderful sweetness.  Corn flakes are crushed, and the battered bread is coated in the crumbs, giving the dish an interesting look.  The technique is simple, but the results are so tasty, you’ll wonder why you’ve never made Crunchy Baked French Toast before!  My family, after making the first time, was already asking me when we could have it again!

  • 5 eggs
  • 1 C milk
  • 1 t ground cinnamon
  • 1 t vanilla extract
  • 1 T maple syrup
  • 4 C corn flakes, crushed
  • 12 slices stale or dense bread
  • non-stick spray


  1. Heat oven to 450 degrees F.
  2. Lightly spray a baking sheet with non-stick spray.
  3. In a bowl, whisk the eggs until well blended.
  4. Add the milk, cinnamon, vanilla, and maple syrup. Mix well.
  5. In another bowl, place the corn flakes.
  6. Dip the bread, one slice at a time, into the egg mixture, then place in the corn flakes. Cover completely on both sides.
  7. Place on the baking sheet.
  8. Repeat with remaining bread, using additional baking sheets if needed.
  9. Bake in heated oven for 12-15 minutes, until golden brown.
  10. Serve with butter and syrup.

A Week’s Worth of Crunchy Baked French Toast
