Dreamy Almond Bars for a Quick Treat

Dreamy Almond Bars were a must for holidays in my family.  A rustic brown sugar shortbread is a fine cookie on its own, but when paired with coconut, almonds, and a wonderful chewy sweet topping, Dreamy Almond Bars became the perfect treat.  They have the right amount of sweet along with the earthy flavors of coconut and almonds to make even the most bah-humbug person smile.  I absolutely adore the chewy tender texture of Dreamy Almond Bars, along with the delicate crunch of the almonds.  They are like heaven in a bar cookie, and best of all, they are quick to make.

Two Step Process to Make Dreamy Almond Bars

There are two steps to make Dreamy Almond Bars.  First, is the wonderfully tender brown sugar shortbread, made of flour, brown sugar, and butter.  Since this is a shortbread, I always use real butter for the cookie portion.  It lends a rich, delicate flavor to the Dreamy Almond Bars that you can’t get with margarine or butter flavored shortenings.  While that is baking, you can mix the topping of almonds, coconut, brown sugar, and a few other wonderful things that make the chewy deliciousness of Dreamy Almond Bars.  They are all easy to mix up using nothing more than a fork and a bowl, and you can have the whole pan in the oven in about 15 minutes, including the initial bake time!

Ingredients

  • Shortbread:
  • ½ C (1 stick) butter, softened
  • ½ C brown sugar
  • 1 C flour
  • Almond Topping
  • 2 eggs
  • 1 C brown sugar
  • ½ t almond extract
  • 2 T flour
  • 1 t baking powder
  • ½ t salt
  • 1 C shredded coconut
  • 1 C chopped almonds

Instructions

  1. Heat oven to 350 degrees F.
  2. In a bowl, mix the butter, ½ C brown sugar, and 1 C flour until a dough forms.
  3. Press into a 9x13 inch pan evenly.
  4. Bake 10 minutes.
  5. While the shortbread is baking, whisk the eggs until well beaten.
  6. Add the remaining ingredients and mix well.
  7. Spread gently over the top of the shortbread and bake an additional 24 minutes, until top is golden brown.
  8. Allow to cool and cut into squares.

Creamy Almond Bars Revisioned

If you aren’t a fan of almonds, try another nut in Dreamy Almond Bars.  Substitute the almond flavoring for hazelnut and add chopped roasted hazelnuts, or even vanilla extract and pistachios or pecans.  Any nut will work in Dreamy Almond Bars.  Change it up for your family to something they enjoy, and make Dreamy Almond Bars your very own.  They also freeze well, if you want to make them up ahead for an event, or even just have them in the freezer for a snack once in a while.  Dreamy Almond Bars are exceptionally versatile and wonderful.
