Chicken Minestrone for Something Different

I wanted some minestrone soup the other day, but instead of putting in beef like I normally do, I had some ground chicken in the freezer and had an idea.  What if I melded my favorite Italian Wedding Soup with minestrone, using ground chicken?  It didn’t take a second thought.  I set out to make some Chicken Minestrone using ingredients I had around the house.  It was the best minestrone I’ve had in a long time and the entire family loved it.  Earthy, wholesome, and perfect for a winter day, Chicken Minestrone is now on my favorites list.

Using What You Have for Chicken Minestrone

Look in the vegetable crisper of your fridge for just about everything you need for Chicken Minestrone.  Even if the veggie is a little wilted or past its prime, it’s perfect for the pot.  Carrots, celery, any other root veggies like turnips or rutabagas, they all work in this fantastically rich soup.  Of course I used garlic and onions, along with a jar of home-canned tomatoes and a spoonful of chicken base that I get at the grocery store in with the broths and boullions.  It’s a thick version of stock that you stir into warm water for a savory broth.  I mixed the ground chicken with egg, bread crumbs, parsley, oregano, and parmesan cheese for a great meatball that cooked fast in the simmering stock.  Lastly, I added some tubettini pasta, little tiny tubes that when cooked, looked like the tiny noodles in Spaghettios.  The Chicken Minestrone was perfect!  I served it with a bit of parmesan and watched it disappear.

Easy Chicken Minestrone


  • 2 carrots, cut into coins
  • 2 ribs celery, diced
  • 5 cloves garlic, chopped
  • 1 medium onion, chopped
  • 1 T olive oil
  • 1 qt (or 40 oz can) tomatoes with liquid
  • 4 T chicken base (or 32 oz chicken stock)
  • Water to fill pot
  • 1 lb ground chicken
  • 1 egg
  • ¾ C breadcrumbs
  • ¼ C grated parmesan
  • 1 t dried parsley
  • ½ t dried oregano
  • ½ lb tubettini pasta


  1. Place the carrots, celery, garlic, and onion in a large stockpot. Add olive oil and saute over medium heat until onions turn clear.
  2. Add the tomatoes, chicken base, and water. Simmer 1 hour.
  3. In a medium bowl, mix the chicken, egg, breadcrumbs, parmesan, parsley, and oregano. Form into 1 inch meatballs and carefully add to simmering pot.
  4. Add the tubettini pasta and simmer until cooked, about 6 minutes.
  5. Serve hot with parmesan.

Chicken Minestrone in Your Slow Cooker

Chicken Minestrone lends itself well to slow cookers.  You can simmer the soup, holding the meatballs and pasta back until about an hour before you are ready to serve it.  Set the slow cooker to high, add in the meatballs and pasta, cover, and let simmer for about an hour.  You’ll have perfect Chicken Minestrone on busy nights where you don’t have much time to fuss over dinner.
