Easy Chicken Saltimbocca is Fabulous

Looking for a new chicken dish?  Chicken Saltimbocca is a great, easy dish to make on any day of the week.  It’s beautiful enough to serve to treasured guests as well.  It goes well with any side dish, especially pastas, and best yet, you can make it ahead of time and freeze it for later, so you can take advantage of chicken on sale!  Chicken Saltimbocca takes just a few ingredients, and a couple minutes to make, making it a favorite in my home with my family.

Interesting Ingredients for Chicken Saltimbocca

Chicken Saltimbocca starts out with boneless chicken breasts, filleted for a thin, easy to work with piece.  I typically purchase bone-in chicken, then remove the bones and skin so I save money in the process.  I place the chicken breast on a cutting board then place one hand over the top and with a knife, cut horizontal to the cutting board, making two thin pieces of chicken.  I then take the chicken and pound thinner with a frying pan or meat mallet.  Once thin, I layer fresh or dried sage leaves and prosciutto, an Italian style smoked bacon that is sliced very very thin.  It has a marvelous flavor that filters through the chicken, making the whole dish fantastic.  The chicken is then rolled with the toppings on the inside, dredged in seasoned flour, and sauteed in olive oil for a browned crispy exterior.  Chicken Saltimbocca is the perfect dish to impress anyone.

Easy Chicken Saltimbocca

Ingredients

  • 2 chicken breasts, bones and skin removed
  • 12 sage leaves, dried or fresh
  • 4 slices prosciutto
  • 1 C flour
  • ½ t garlic salt
  • ¼ t ground black pepper
  • ⅓ C olive oil

Instructions

  1. Place the chicken breasts on a flat surface and cut horizontally, to form 2 pieces from each breast.
  2. Cover with plastic wrap and pound flat and even, about ¼ inch thick.
  3. On each breast, place 3 sage leaves and 1 slice of prosciutto.
  4. Roll up, starting on a short end.
  5. In a bowl, mix the flour, salt, and pepper.
  6. Dredge each chicken breast roll in the flour.
  7. In a saute pan, heat the olive oil over medium high heat.
  8. Place the chicken in the pan and brown on all sides, making sure no pink remains in the center.
  9. Serve hot with pasta, salad, or any other side dish.

Freezing Chicken Saltimbocca

It’s easy to make up Chicken Saltimbocca and freeze it for later.  Simply make it as instructed above, but don’t dredge in the flour.  Place a toothpick to hold each one closed, and gently lay them out on a parchment covered baking sheet.  Freeze until solid, then place the Chicken Saltimbocca in a freezer grade plastic zippy bag that is labeled with the contents and date.  On the day you want to cook them, remove from the freezer and allow to thaw completely.  Continue with the recipe as described.  You’ll have a fantastic dinner of Chicken Saltimbocca any time you like!
