Creating Kitchen Substitutions on the Fly

Every once in a while, I think I have an ingredient, and when I go to get it out, realize that someone has used up the last of it.  Drat!  Now what?  Well, I head for my handy dandy list of kitchen substitutions!  There’s a lot you can do to make up for missing ingredients.  Check out these simple kitchen substitutions for the most common ingredients.

Dairy Substitutions

milk

1 C buttermilk = 1 T lemon juice or vinegar plus enough milk to make 1 C

1 C heavy cream = ⅓ C melted butter + ¾ C milk

1 C whole milk = ½ C evaporated milk + ½ C water

1 C sour cream = 1 C plain (unsweetened) yogurt

1 C buttermilk = 1 C plain (unsweetened) yogurt

1 C milk/buttermilk = 1 C rice or nut milk

Egg Substitutions

eggs

1 whole egg = 2 egg yolks (for creamy dishes or custards)

1 whole egg = 2 egg yolks + 1 T water (for baked goods)

1 whole egg = 2 ½ T dried egg, beaten with 2 ½ T water

Baking Substitutions

flour

1 C cake flour, sifted = ¾ C + 2 T all purpose flour, sifted

1 C self rising flour = 1 C all purpose flour + 1 t baking powder + ¼ t salt

1 T flour (for thickening = ½ T arrowroot or 2 t quick cooking tapioca

1 T cornstarch (for thickening) = 2 T flour

1 t baking powder = ⅓ t baking soda + ½ t cream of tartar

1 package dry yeast = 2 ¼ t dry yeast

Sweets Substitutions

unsweetened chocolate

1 ½ C corn syrup = 1 C sugar + ½ C water

1 C brown sugar = 1 C white cane sugar + 1 T molasses (for light) or 2 T molasses (for dark)

1 square unsweetened chocolate = 3 T cocoa powder + 1 T fat (coconut oil or butter)

1 oz semi sweet chocolate = 1 oz unsweetened chocolate + 4 t sugar

Miscellaneous Substitutions

bread crumbs

¼ C dry bread crumbs = 1 slice bread, toasted

½ C soft bread crumbs = 1 slice bread

1 C bread crumbs – ¾ C cracker crumbs

1 T fresh herbs = ½ to 1 t dried herbs

1 clove garlic – ⅛ t garlic powder or ¼ t granulated or ½ t minced

 

Easy Kitchen Substitutions

Don’t panic when you realize you are missing an ingredient.  Find a great substitution!  You might find you like it better than the original ingredient!  I found my family loves my pancakes when I make them out of vanilla rice milk, and it was because I was out of buttermilk that I used it.  Bookmark this list of kitchen substitutions so you never have to worry about what to use again!
