Easy Lasagna for those Busy Nights

Some nights, I need a dinner that I can fix quickly and toss in the oven while I get other things done, like helping the kids with homework.  Easy Lasagna is one of those dishes that’s my go-to when I don’t have the time to make a full blown fancy meal for my family.  What makes it so easy is the ravioli in place of the lasagna noodles and cheese.  There’s no boiling, no fuss when you make Easy Lasagna.  It’s ready for the oven in the amount of time it takes you to brown some ground beef and pour everything into the pan, then, an hour later, you have the perfect dinner that everyone can love.

Simple and Fast Ingredients for Easy Lasagna

I started out my Easy Lasagna with some ground beef and onions, browned until no pink remains and the onions are clear.  I saved time by starting the ground beef browning while I cut the onions, reducing the time it takes to get this dish in the oven.  I added in my favorite organic pasta sauce, and portobello mushroom frozen ravioli.  Of course, I topped it with a bag of Italian blend cheese because really, can you ever have enough cheese?  After a trip through the oven, it lasted minutes at the table.  I can count on one bag of ravioli giving me no leftovers but very happy family members at the table.

Easy Lasagna in Minutes

Ingredients

  • 1 lb ground beef
  • 2 small onions, diced
  • 1 jar pasta sauce
  • 1 25 oz bag frozen ravioli
  • 1 8 oz pkg shredded Italian blend or mozzarella cheese

Instructions

  1. Heat oven to 350 degrees F.
  2. Brown the ground beef and onions in a saute pan.
  3. While those are sauteing, pour about ¼ of the sauce into a 9x9 pan or Dutch oven to coat the bottom.
  4. When the ground beef is completely cooked through, add the remained of the sauce to it and stir well.
  5. Place ⅓ of the frozen ravioli in the pan. Top with ⅓ of the sauce. Repeat until no more ravioli and sauce mixture remain.
  6. Sprinkle the cheese over the top.
  7. Cover with lid or aluminum foil that you have sprayed with a bit of cooking spray to keep the cheese from sticking.
  8. Bake in heated oven for 1 hour.
  9. Serve hot.

Changing up Easy Lasagna

This is such a versatile dish, you can change it up to be many things.  Try pumpkin ravioli and a creamy alfredo sauce, or meat ravioli with a rich vodka sauce.  There are so many combinations you can try, and so many veggies you can add to the sauce to make Easy Lasagna something different every time.  You can even make up Easy Lasagna in a few aluminum foil pans and freeze it for a great dinner that you just need to pop in the oven!
