Whether it’s for dinner for the family, or as part of a buffet for company, Slow Cooker Meatball Casserole is amazing.  I love to pair mine with a big green salad to make dinner complete.  Slow Cooker Meatball Casserole is super easy to make, and you can even make it ahead!  Meatballs, cheese, sauce, and garlic bread come together to make something akin to a meatball sub, but it’s all in one slow cooker.  From kids to adults, Slow Cooker Meatball Casserole is a great meal or snack that satisfies.

Simple Ingredients in Slow Cooker Meatball Casserole

It doesn’t take anything fancy to make Slow Cooker Meatball Casserole.  I started out by melting some butter until it was soft, but not completely melted.  I added some garlic, gave it a stir, and let it set back up so it was spreadable.  Italian bread, sliced in ½ inch thick slices, became the bread of choice.  It holds up well yet absorbs a lot of the juices, making it amazing for Slow Cooker Meatball Casserole.  I have to admit, I cheated on the meatballs.  Normally, I make my own, but I wanted Slow Cooker Meatball Casserole to be a quick to put together meal, so you can even make it on a weekday morning before heading to work.  Shredded mozzarella cheese and my favorite pasta sauce rounded out the recipe to make a fantastic meal.

Easy Slow Cooker Meatball Casserole


  • 1 stick butter
  • 3 cloves garlic, minced fine
  • 1 loaf Italian bread, cut in ½ inch slices
  • 1 bag frozen meatballs
  • 1 8 oz pkg mozzarella cheese
  • 1 jar pasta sauce


  1. Melt the butter until it’s soft enough to mix in the garlic, but not completely melted.
  2. Add the garlic and stir. Allow to set back up for about 5 minutes.
  3. Spread the garlic butter on one side of the bread and place it butter side towards the crock in a slow cooker, filling the bottom first and working your way up the sides.
  4. Once the sides are covered, layer through the center with meatballs, cheese, sauce, and bread. The last layer should be bread, followed by some sauce and cheese.
  5. Place in the slow cooker sleeve and set to low. Cook 4-5 hours, until mixture is bubbly and hot.
  6. Serve hot.

Making Slow Cooker Meatball Casserole Ahead

You can make Slow Cooker Meatball Casserole up to a day ahead, so you have it ready to go!  Usually, if I make it a day ahead, I’ll bake it a little bit in the oven, about 40 minutes on 350 degrees F, to get the outside edges crispy and the center gooey before I put it in the slow cooker sleeve.  It works great if you don’t have the time to let Slow Cooker Meatball Casserole heat up for a few hours in the slow cooker sleeve.  All you need for the perfect meal is to add a veggie on the side and you are all set with Slow Cooker Meatball Casserole.
