Herbing Up Your Cucumber Sandwiches

I love adding herbs to soft cheese.  There are so many combinations you can try, and so many herbs to play with, that really, the choices are endless.  During the summer, I use fresh herbs right from my garden.  A quick rinse in cold water, pat dry with towels, they are the best way to season just about anything.  During the winter, I season with either fresh store bought herbs or dry.  Either way, allowing the soft cheese to sit in the refrigerator overnight will bring out the flavors and really make the dish pop.  Try adding minced garlic, onions, basil, and oregano for an Italian flair.  Or try an Asian flair with minced ginger or Chinese 5-spice.  Looking to go Greek?  Mince the cucumbers, lightly salt them, then press out any liquid and add to the cheese.  Top with thin slices of cucumber, roasted red peppers, or pitted kalamata olives for a great look.  Cucumber Sandwiches are so versatile, you’ll wonder why you haven’t tried these simple appetizers before.

  • 2 C soft cheese
  • 4 green onions, minced
  • 2 cloves garlic, minced
  • ¼ C fresh dill, minced
  • 1 hothouse cucumber, sliced very thin
  • 1 loaf appetizer pumpernickel, rye, or sourdough


  1. In a small bowl, mix the cheese, onions, garlic, and dill until well mixed.
  2. Cover and refrigerate overnight.
  3. To assemble, arrange the bread on a serving platter.
  4. Top each slice with a tablespoon of the cheese mixture.
  5. Arrange a cucumber slice on each and serve.
