Fab Kale Chips for the Perfect Snack

When I heard about Fab Kale Chips, I thought ew.  Chips made from a vegetable.  Then I had that vegetable in a salad at The Cheesecake Factory, and I revisited the idea of Fab Kale Chips.  Kale is a bit of a bitter green, thicker than baby spinach, and larger leaves could be considered tough, but when baked into chips, it loses the bitterness, and takes on the perfect sweetness that is fabulous with a sprinkling of salt.  It’s a great healthy snack that contains all kinds of great nutrients.  High in vitamin A and C, it’s my favorite snack swap, even with the kids.  It even has a bit of protein to give you a boost.

Choosing Kale for Your Fab Kale Chips

In choosing kale for your Fab Kale Chips, look for fresh, firm leaves. You’ll be cutting out the main ribs, so look for ribs that are crisp.  Your best bet is in the loose greens section of your favorite grocery store.  I love dark green kale that is labeled “black” kale.  It has the perfect flavor.  There is also a red Russian variety that makes delicious chips.  Whatever you find, just make sure it’s fresh and crispy.  I use a lighter olive oil for Fab Kale Chips.  I learned a long time ago that a lighter oil is better when you heat it.  The heavier, extra virgin oils lose a lot of their flavor and are better as a finishing oil.

Ingredients

  • 1 bunch kale, ribs removed and leaves cut into pieces
  • 2 T olive oil
  • salt, sea, garlic, or seasoned

Instructions

  1. Heat oven to 275 degrees F.
  2. Place the kale on a baking sheet. Drizzle with olive oil and toss.
  3. Bake 20-30 minutes, stirring about every 10 minutes, until kale is crispy.
  4. Remove to a paper towel lined plate.
  5. Sprinkle with salt.
  6. Enjoy!

Flavoring your Fab Kale Chips

You can use any kind of flavored salt on your Fab Kale Chips.  I love to use a bit of garlic salt as it adds a brightness to the earthy flavor of the kale.  Lemon pepper also works well, as do flavored popcorn salts you can find in the popcorn section of your favorite grocery store.  Any way you flavor them, Fab Kale Chips are amazing and a healthier alternative to their potato counterparts.
