Fennel is an airy looking herb that imparts phenomenal flavor into anything you put it in, including Fabulous Fennel Salad. Many times you’ll find fennel tops in the grocery store with the fresh herbs, and sometimes you can also find the bulb. In Fabulous Fennel Salad, you will use both the bulb and the fern-like leaves to make a fresh, crisp salad and a complimentary dressing. Fennel is also an easy to grow herb, so if it’s not available in your local grocery store, you can easily grow it in your own herb garden!  Fennel seeds can often be found in the Spring at your local garden center or online at your favorite seed company.

How to use Fennel in Fabulous Fennel Salad

Fennel is a very easy herb to use as well as grow. By cutting stalks of ferny leaves off the top, you can chop those to use in the dressing. And by stripping the stalks off the bulb, you can peel the bulb and use it with your other veggies in salads simply by slicing it up!  It’s a great way to get the crisp, fresh flavor of fennel in your diet.  You can also pickle slices of them a bowl in a manager and salt brine, then dot your Fabulous Fennel Salad with them to add an unexpected tangy crunch to the dish.

  • 3 C spring lettuce mix
  • 1 pint grape or cherry tomatoes, sliced
  • 1 fennel bulb
  • ½ C white wine vinegar
  • 1 C olive oil
  • 1 t dried oregano
  • 1 t minced garlic
  • salt
  • pepper


  1. Place the lettuce and tomatoes in a salad bowl.
  2. Slice the ferny tops off the fennel bulb and set aside.
  3. Peel the outside layer off the bulb and slice, discarding the root end. Sprinkle over the salad.
  4. Set the salad aside.
  5. In a jar, mix the vinegar, oil, and seasonings. Mince about ¼ C of the fennel fronds and place in the jar. Cap and shake well.
  6. Serve the salad chilled with the dressing.
