Refreshing Quinoa Salad ~ Delicious and Beautiful

I love salads made from grains, so it was pretty natural of me to make a Refreshing Quinoa Salad.  A quick trip around the produce department at my favorite grocery store, and I had a few tasty treats to add to my basic grain.  But what is quinoa?  It’s an ancient seed, that’s not a true grain, that was cultivated about 5000 years ago in the Andean region of South America.  Pronounced KEEN-wah, this beautiful seed is high in protein (8.14 g per cup) and is low in fat (3.4 g per cup).  It’s a very versatile seed that works well in hot side dishes as well as cold in salads.

What Makes a Refreshing Quinoa Salad so Special?

A good salad has a lot of different levels of flavor in it, including a little bitter, sweet, sour, and savory.  Refreshing Quinoa Salad has all of that and more.  Watercress, found in the produce section, provides a bit of spice and bitter, which is balanced out by the sweetness of the red ripe strawberries.  The brined feta provides a beautiful sour twist that is accentuated by the crisp freshness of the cucumber and mint.  Refreshing Quinoa Salad is the perfect summer salad to brighten up your table, not only in color, but also flavor.

Figure Friendly Friday ~ Refreshing Quinoa Salad

Ingredients

  • 1 C quinoa
  • 2 C water
  • 1/2 English cucumber, diced
  • 1 bell pepper, any color, diced
  • 1 pt grape tomatoes, halved
  • 1 pt strawberries, cleaned and sliced
  • 1/2 bunch watercress leaves
  • 3 sprigs mint, diced
  • 4 oz feta cheese, crumbled
  • 1/2 C olive oil
  • 1/4 C apple cider vinegar
  • 2 t oregano
  • 1 t salt
  • 1/2 t pepper

Instructions

  1. Place the quinoa and water in a medium sauce pan. Heat to a boil, reduce heat to simmer, and cover. Simmer 15 minutes. Remove from heat and let rest 5 minutes to absorb the remainder of the water.
  2. Rinse the quinoa in cool water to chill quickly.
  3. Place all the ingredients in a bowl and stir to mix.
  4. Chill in the fridge and serve with your favorite meal.
