Turkey Lettuce Wraps are a Great Summer Picnic Meal

I first found Turkey Lettuce Wrapsin a magazine a few years ago, I thought they were a little odd.  Then I made them.  My family loved them so much, they have become a summer staple in my recipe box.  Savory turkey is mixed with some fabulous Asian seasonings, to become something like you’ve never tasted.  Salty, sweet, and savory, all mixed into one simple dish, then rolled in leaves of lettuce for a fantastic, healthy meal that’s quick to make on a weeknight, or to make for a picnic in the park.

What Seasons Turkey Lettuce Wraps?

My favorite Asian seasoning is black bean paste with garlic.  It makes a wonderful addition to Turkey Lettuce Wraps, as garlic is a great seasoning for just about everything.  The black beans are fermented and give a rich flavor almost akin to soy sauce.  Oyster sauce adds a salty, fishy flavor that brightens the earthiness of the turkey.  I’m not sure what’s in hoisin sauce, but it’s delicious and melds the flavors together to make Turkey Lettuce Wraps phenomenal.  Ginger and garlic, finely grated, season the meat while it’s cooking, before the sauces are added in, so you have a great base to start with.  Lastly, cashews, finely chopped, add a bit of crunch that is amazing and really tops off the dish.

Figure Friendly Friday ~ Turkey Lettuce Wraps


  • 1 20 oz pkg ground turkey
  • 1/2 inch knot ginger, peeled and grated
  • 2 cloves garlic, peeled and grated
  • 2 T black bean paste with garlic
  • 1 t oyster sauce
  • 1 t hoisin sauce
  • 1/2 C roasted and salted cashews, chopped fine
  • 1 head iceberg lettuce, core removed and leaves separated


  1. Brown the turkey, ginger, and garlic in a sauté pan over medium heat until no pink remains.
  2. Add the bean paste, oyster and hoisin sauces. Stir and simmer until the sauces are reduced.
  3. Sprinkle the cashews over the seasoned meat. Stir to mix.
  4. Remove from heat and let cool.
  5. Spoon two tablespoons of meat mixture into the center of a lettuce leaf. Fold in the sides and roll to close.
  6. Serve warm.

When you are looking for a light dinner that’s quick to make, Turkey Lettuce Wraps fit the bill!  I love to take this dish on picnics, with the turkey mixture in a container that is wrapped in a warm heating pad, and the lettuce in a plastic zippy bag in a cooler.  When you are ready to eat, simply wrap them up and you are good to go.  They are great cold too!  So if you are uneasy about taking the turkey warm, chill it and munch on your Turkey Lettuce Wraps!
