Easy Dinner with a Freezer Meal: Beef Roast and Stew

There’s nothing quite easier than having everything ready for a healthy, delicious meal all in one bag, ready for your slow cooker.  Beef Roast and Stew is a fantastic meal to have at your fingertips.  I get everything cleaned, chopped, and seasoned, so all I need to do is thaw it overnight in the refrigerator and put it in the slow cooker for an easy, delectable meal without any fuss or time.  Beef Roast and Stew is exceptionally versatile, as you can use whatever vegetables you have on hand, and the same combination can be served as a wonderful roast dinner, or you can take the meat out, cut it up, and return it to the slow cooker for a beautiful stew.  It’s that easy!

Ingredients for Beef Roast and Stew

I start my bags of Beef Roast and Stew with whatever beef is on sale that week at my favorite grocery store.  This round of freezer meals, Eye of Round was on sale.  (See how I saved money by buying a whole Eye of Round here!)  I seasoned the meat with some garlic salt and pepper, before adding in my vegetables.  Onions, carrots, and celery are my base vegetables.  I added some creamy red potatoes and a mixture of mushrooms to round out the mix and make the bag perfect for Beef Roast and Stew.  Into the freezer it went until I was in need of an easy meal that I didn’t have to fuss over!

  • 1 2-3 lb beef roast
  • 4 carrots, sliced
  • 4 ribs celery, sliced
  • 3 onions, diced
  • 3-4 potatoes, diced
  • 12 oz mushrooms, diced
  • salt
  • pepper


  1. Place all ingredients in a freezer plastic zippy bag. Label and Freeze.
  2. To Cook:
  3. Thaw overnight in the refrigerator.
  4. Place all ingredients in a slow cooker and cover.
  5. Set to low and simmer 8-10 hours.
  6. Serve hot.
  7. To Make Stew:
  8. Remove the meat and cut into bite sized pieces. Return to the slow cooker.
  9. Add water or broth if needed for gravy.
  10. Sprinkle 3 T flour or tapioca flour over the mixture and stir in.
  11. Turn slow cooker to high and cover. Allow to heat for about 10 minutes, until mixture thickens.
  12. Serve hot.

Beef Roast and Stew: Which to Make?

The beauty of this recipe is you don’t have to worry about answering which to make, Beef Roast or Stew until you are about ready to serve it.  To turn the roast into stew, I pulled out the meat, cut it into bite sized pieces, and returned it to the slow cooker.  I added a little bit of water to make gravy, as well as some beef soup base, then added some tapioca flour for thickening.  A quick stir and I turned the slow cooker up to high for about 10 minutes to let the juices thicken.  It made an amazing stew with hardly any effort when I started with a Beef Roast and Stew freezer meal packet.
