Brussels Sprouts with Bacon – Season It Up!

Preparing the Sprouts for Brussels Sprouts with Bacon

If you’ve never worked with fresh sprouts, they are very easy to prep for Brussels Sprouts with Bacon.  I purchase mine two ways, but always fresh.  Sometimes I can find them on the stalks, ready to be harvested.  Sometimes, I can only find them in the mesh bags.  If you find them on stalks, simply cut them off using a sharp knife, as close to the stalk as you can get.  With either of them, slice off the cut end in a sliver, then peel off the bottom leaves.  Rinse and cut in half.  You are all ready to use them in your Brussels Sprouts with Bacon dish!

  • 4 strips thick-cut bacon
  • 2 tablespoons butter
  • 1 pound Brussels sprouts, halved
  • 1/2 large onion, chopped
  • Salt and freshly ground black pepper


  1. Cook bacon in a large skillet over medium-high heat until crispy. Remove to a paper towel-lined plate, then roughly chop.
  2. In same pan with bacon fat, melt butter over high heat.
  3. Add onions and Brussels Sprouts and cook, stirring occasionally, until sprouts are golden brown, 8 to 10 minutes.
  4. Season with salt and pepper, to taste, and toss bacon back into pan. Serve immediately.

It’s always important to use fresh sprouts, especially in sauteed dishes such as Brussels Sprouts with Bacon.  They are crisper, fresher, and have a much better flavor than those that have been blanched and frozen.  Fresh sprouts will also yield a much better dish than frozen if you are roasting them in the oven.  Save the frozen sprouts for steaming, or better yet, pass them by completely, unless they are the only option you have left.  So check the produce section of your favorite grocery store for some fresh sprouts and make Brussels Sprouts with Bacon for dinner!
