Gluten Free Crustless Quiche starts with fresh eggs, which form the body of the dish.  Broccoli, onions, and bacon give the quiche a fantastic flavor and a beautiful bite.  Finishing off the dish before it heads into the oven is cheese.  Muenster is my favorite, so that’s what I used, but you can use any cheese that trips your trigger.  Swiss tastes fantastic, as well as cheddar.  There are a lot of wonderful craft cheeses out there that would make Gluten Free Crustless Quiche perfect for your family.

  • 1 tbsp olive oil
  • 1 onion (chopped)
  • 4 slices of bacon cut into small pieces
  • 10 ozs fresh broccoli chopped and steamed in microwave for 90 seconds
  • 5 eggs (beaten)
  • 3 cups muenster cheese (or your favorite cheese)
  • 1/4 tsp salt
  • 1/8 tsp ground black pepper
  • Green onions for topping


  1. Heat the oven to 350°F.
  2. Spray a 9 inch pie pan with nonstick cooking spray.
  3. In a large saute pan, heat the oil over medium high heat. Add the onion and bacon. Saute until the bacon is crispy.
  4. Add the broccoli and cook until the moisture is driven off.
  5. In a bowl, mix the eggs, cheese, salt, and pepper. Add the broccoli mixture and stir.
  6. Pour into the pie pan and bake about 30 minutes, until the eggs have set in the middle.
  7. Cool 10 minutes and serve.
