Green Goddess Dressing ~ An Old Favorite Rediscovered

I remember as a kid my mom making Green Goddess Dressing.  I always thought it an odd dressing, adding a creamy green mix to a green salad and all.  It wasn’t until recently that I thought to make it for my own kids.  I was talking to some friends and asked them what salad dressings they loved.  Someone brought up Green Goddess Dressing that they buy in the grocery store.  I knew I had to be able to make it at home with ingredients that I can pronounce.  Boy, was I right!  With a little help from my food processor, I made what was arguably the best salad dressing I’ve ever made.  I think Green Goddess Dressing is a renewed favorite that I’m happy to put on the table for my family.

What is Green Goddess Dressing, Anyway?

Green Goddess Dressing starts out the way many creamy dressings start out, with sour cream and mayonnaise.  But what makes Green Goddess Dressing not only amazing, but, well, green, is the herbs.  Parsley, tarragon, and chives give Green Goddess Dressing a phenomenal flavor that is earthy and lives up to the moniker of green.  A bit of anchovy paste adds a salty layer to the mix and garlic finishes out the flavor with a bit of bite.  It’s a great blend of flavors that meld together to make the best homemade dressing I’ve ever had.

Salads for Green Goddess Dressing

Just about any salad is perfect for Green Goddess Dressing, whether it be a green garden salad, or even a simple cauliflower and broccoli salad.  They all work great with this fresh dressing.  I love a salad full of veggies, like homegrown tomatoes, cucumbers, and spinach, and this dressing is amazing on it.  Add a few croutons and some bacon bits, and you have a phenomenal salad to pair with dinner, or add some chicken on top and have it as a meal.  Any way you make your salad, Green Goddess Dressing is the perfect topping.
