Hershey’s Kisses Mini Cheesecakes

Oh how yummy is a Cheesecake with Chocolate?  Just the right amount of Chocolate too!  A Hershey’s Kiss right in the middle of a Mini Cheesecake – that is what makes Hershey’s Kisses Mini Cheesecakes so amazing.

Unlike a large cheesecake, where you need to have a water bath, or worry about cracking on the top of the cake, these mini cheesecakes are almost fool-proof.

There are a few variations that I like to do on these, instead of the Hershey’s Kiss:

  • Miniature Reeses’ Peanut Butter Cup
  • Miniature Snickers
  • Chocolate Chips
  • A Rolo

The possibilities are almost endless.  I love almost anything.  I even love them without anything tucked inside.  As a matter of fact, when I did the recipe tonight, I left half without Kisses.  :)  YUMMMM!

Hershey’s Kisses Mini Cheesecakes

Ingredients:

Prescription Eyewear Starting at $9.95 at Glasses Shop.com
  • CRUST
    • 1 Package of Graham Crackers (not the entire box, one of the 3 sleeves inside the box), Crushed
    • ½ stick of butter (melted)
    • 2 Tablespoons of sugar
  • FILLING
    • 2 (8-oz) packages cream cheese, at room temperature
    • ½ cup granulated sugar
    • 2 eggs
    • 1 teaspoon vanilla
    • 12 Hershey’s Kisses, Unwrapped

Directions:

  1. Preheat oven to 375 degrees.
  2. Combine ingredients for crust
  3. Spoon into a muffin tin lined with cupcake liners
  4. Press with all your might.  (not really, just press hard, this recipe calls for less butter than most, so you really need to press hard to keep it as tight as possible)
  5. In a medium size bowl, combine the sugar and cream cheese well.
  6. Add the eggs and vanilla and whip until light and fluffy.  (Resist the urge to eat it all before you get it to the pan)
  7. Place a Hershey’s Kiss into the center of each lined muffin tin well.
  8. Evenly divide the batter into the 12 lined muffin tin wells.
  9. Bake at 375 degrees for 15 – 18 minutes or until there is no more jiggle in the center of each.  (there may be a little movement, but no jiggle)
  10. Let cool on a cooling rack, in the pan, for at least 45 minutes.
  11. ENJOY!

So, how do you like your cheesecake?

One quick tip….if you are going to do some with and some without Hershey’s Kisses, it is best to use different color liners for each one.  That way you don’t have to bite into the cheesecake in order to tell what is in there.  Or maybe you want to do that.  :)
