I used to love going to Panera and getting a salad with their Raspberry Vinaigrette dressing.  And then, they discontinued it.  Boo!  I’ve been trying for a year to come up with something similar.  Raspberry Vinaigrette dressings from the store had barely any raspberry flavor, and the flavor it did have left a chemical taste in my mouth.  Ew!  Then, I finally figured out a recipe that tastes perfect.  Zesty, flavorful, and perfect, this Raspberry Vinaigrette is going to be a summer favorite.

Summer will hopefully be coming soon.  When it does, Raspberry Vinaigrette will be the first dressing you grab.  Fresh raspberry flavor, from real, ripe berries, will make the earthiness of fresh spinach pop like never before.  You’ll find yourself adding new things to your salad, like plump blackberries, or luscious strawberries.  Crunchy pecans will dance on your taste buds.

The Vinegar Makes the Raspberry Vinaigrette

I found an amazing raspberry vinegar that had a beautiful flavor, without having the chemical aftertaste.  Alessi White Balsamic Raspberry Blush Vinegar is inexpensive ($2.69 for an 8.5 oz bottle) and full of a bright raspberry flavor.  It added a nice, complex note to the dressing that a non-flavored vinegar would not have brought.

Meatless Monday: Homemade Fresh Raspberry Vinaigrette and the Salad It Rode In On

Ingredients

  • 1 pkg (4 oz) fresh red raspberries
  • 1/2 C olive oil
  • 1/2 C white balsamic raspberry blush vinegar
  • 1/2 C sugar
  • 2 t Dijon mustard
  • 1/4 t oregano
  • 1/4 t black pepper

Instructions

  1. Mash the raspberries in a medium sized bowl. Add the sugar and stir to moisten. Let sit 5 minutes.
  2. Add in the rest of the ingredients and mix well.
  3. You can use the dressing immediately, or let it sit overnight in the refrigerator to meld the flavors.
  4. Use over your favorite salads.

What Salad Deserves Raspberry Vinaigrette?

Every salad deserves something as delicious as Raspberry Vinaigrette!  I started my salad with a bed of romaine lettuce and spinach, topped with red pepper, sweet onions, tomatoes, sliced cucumbers, and beautiful red ripe strawberries, as well as fresh blackberries and toasted pecans.  The crunch was amazing, followed by the flavor of summer on my tongue!  Despite the winter blast across the nation, it tasted like a summer’s farmer’s market at my house!

    This looks delicious! I too have been so frustrated with bottled raspberry vinaigrettes that hardly taste like fruit.

    FYI – they just started carrying bottles of Panera salad dressing in the refrigerated section at Target. Don’t know if they’re good but hopefully they’re like what you loved.
