Versatile and Delicious, Instant Mini Cheesecakes are Amazing!
Quick, adorable desserts are wonderful to have in your recipe box. Especially ones that are easy to change up so you aren’t serving the same dessert every time. Instant Mini Cheesecakes are just that type of recipe that you can change up a hundred ways to make it amazing every time! A few ingredients, many of them you already keep on hand, are all you need for a fabulously delicious dessert. Cream cheese, pudding mix, milk, tart shells, and some toppers, and you are all set for Instant Mini Cheesecakes!
Changing Up Instant Mini Cheesecakes
My recipe uses cheesecake flavored pudding, but any pudding can be substituted. I’ve used chocolate in these for amazing banana chocolate Instant Mini Cheesecakes. Pistachio works just as well, with chopped pistachios scattered over the top. Try coconut cream flavored with bits of pineapple and cherries for a great tropical treat too. Toppings can take Instant Mini Cheesecakes from delicious to fabulous. I love warmed caramel ribbons, or raspberry jam on my Instant Mini Cheesecakes. Fresh fruit takes them up a notch too, giving them a fresh taste that can’t be beat. Try your favorite ice cream toppings too! You’ll love the results!
- 1 pkg cheesecake flavored instant pudding
- 2 C cold milk
- 1 8 oz pkg cream cheese, softened
- 1 box shortbread tartlet shells
- toppings, such as fruit, caramel, pie filling, or whipped cream
- Mix the pudding and milk as directed on the package.
- Whip the cream cheese in a bowl and add the pudding in a little at a time until completely incorporated and creamy.
- Fill the tartlet shells with pudding.
- Top with toppings.
Instant Mini Cheesecakes in Advance
If you are going to be rushed, or want to have the filling ready at a moment’s notice, you can make the filling up in advance and refrigerate it. It will keep for 3-4 days in the fridge. Fill the tarts when you are ready to eat them, as the shortbread can become very mushy if you make them up in advance. I love to make up a batch and have a treat or two a day to satisfy my sweet tooth. It’s an easy way to have a delicious treat and not eat them all at once. The filling itself makes an amazing pudding treat that you can eat as it is, or freeze it in popsicle molds for a summer treat. Anyway you make it, Instant Mini Cheesecakes are an awesome treat!
