Leftover Chicken Means Chicken Salad!

What to do with leftover chicken?  Simply, Chicken Salad is one of the easiest things to make from your leftovers.  With ingredients that you probably have on hand, you can whip up a salad in minutes, for a great snack, lunch, or even a quick dinner.  It’s a favorite for kids and adults alike, making it perfect for even the pickiest of eaters.

Chicken Salad – So Many Options

There are a lot of options when it comes to making your Chicken Salad.  From everyday to exotic, there are a lot of great ways to make Chicken Salad unique.  One of my favorites is a recipe that was given to me by a wonderful lady that worked with my mom.  She called it Greek Chicken Salad.  It was the same basic recipe written below, but with a cup of halved seedless grapes, a cup of shredded mozzarella cheese, and a small bag of chopped walnuts.  Now, don’t say, “ew!  Grapes in my Chicken Salad!”  I thought the same thing.  But boy, was I surprised!  The sweetness and the tang made the salad amazing beyond belief.  It was perfect stuffed in a pita.  You can take the salad and pita separately, and assemble them at work or school, so you have a fresh sandwich that is a perfect lunch.

  • 2 C leftover chicken, diced
  • 1/2 C sweet onion, diced
  • 1/2-3/4 C mayo (I used Garlic-Herb Lemonaise)


  1. Place the chicken and onion in a bowl.
  2. Add 1/2 cup of mayo and mix. If it's too dry add some more mayo until it's the consistency you prefer.
  3. Serve on bread, crackers, wrapped in lettuce, or even stuffed in a tomato.

My favorite Chicken Salad was made from barbecued chicken.  You might think it would have an odd flavor, but it was so savory and delicious, I started making extra barbecued chicken just so I could make fabulous Chicken Salad with all that extra flavor.  I even mixed some barbecue sauce with the mayo, making kind of a Thousand Island kind of sauce, that I mixed with the chicken for a tangy twist to a basic Chicken Salad.
