Roasted chicken is a great start to a lot of recipes, and Lemon Garlic Chicken is one of my favorites.  Lightly, yet deeply flavored, lemons and garlic bring a bright taste to chicken that compliments any meal.  I love to make this dish with a whole chicken, but cut pieces do just as well baked to perfection as Lemon Garlic Chicken.  The juices can be made into a wonderful gravy, wasting nothing in this dish.  Best of all, Lemon Garlic Chicken can keep you on track for any health resolutions you have made for yourself, no matter what time of year!

An Easy Dinner with Lemon Garlic Chicken

Lemon Garlic Chicken makes dinner easy no matter what night of the week you are making it.  Sliced lemons under the skin of the chicken puts the flavor deep into the meat, keeping it moist and savory.  Fresh garlic is placed with the lemons, bringing an earthy tone and balancing the lightness of the garlic.  Salt and pepper brightens the flavors, and works them into the meat, tenderizing everything to perfection.  You can marinade the chicken in the refrigerator overnight, then grill it, or place it in a baking dish in the oven, sealing in the juices with a bit of foil, and baking it until it falls off the bone.  Either way you make it, Lemon Garlic Chicken is a refreshing, delicious dish on your table.

Lemon Garlic Chicken


  • 1 roaster chicken (or 4-5 lbs chicken pieces)
  • 2 lemons, sliced thin
  • 1 bulb garlic, split into cloves and peeled
  • salt
  • pepper


  1. Heat oven to 425 degrees F.
  2. Place the chicken in a baking dish and separate the skin from the meat.
  3. Slide the lemons and garlic under the skin.
  4. Liberally salt and pepper the chicken.
  5. Cover with foil tightly.
  6. Bake 1 ½ to 2 hours, until juices run clear and chicken is cooked through and tender.
  7. Serve hot.

Leftovers with Lemon Garlic Chicken

I always make more Lemon Garlic Chicken than my family can possibly eat, so that I have a lot leftover to make other dishes.  One of my favorites is Buffalo Chicken Dip, with Chicken Salad a close second.  I also love to shred the leftover chicken while it’s still warm, then put it over salads later for a lean protein addition that takes a salad from blah to ah-mazing!  It even works with any salad dressing you can think up!  So make extra Lemon Garlic Chicken and be ready to use it in all kinds of recipes.
