Lemon Mousse Shots ~ The Perfect Ending

How many times have you been out for dinner and the dessert menu has little mini-desserts on it?  They are becoming more and more popular, in part because people are realizing that they don’t need a huge dessert to satisfy the craving of something sweet.  A small shot glass of dessert is perfect to clean your palate.  These little Lemon Mousse Shots are just the right size to satisfy the craving of something sweet but not completely blow your diet.  Plus, it’s made with stevia, so you aren’t getting a ton of added sugar!  (Hmm…think we can call it health food?)

The Base of Lemon Mousse Shots:  Nilla Wafer Cookies!

Ok, so maybe we aren’t quite ready to call this dessert health food.  Yet.  The base of the dessert is Nilla Wafers, crushed, tossed with melted butter (there goes the health food status) and pressed into 6 oz “shot” glasses.  When you chill the glasses, the butter melds the cookies back together into a solid disk in the bottom of the glass.  It’s a fantastic ending to a delicious Lemon Mousse Shots dessert.

In a word, YES!  All you need is a hand or stand mixer, a bowl, and some glasses.  You could always make Lemon Mousse Shots in a larger glass, or dessert cups if you don’t have clear 6 oz glasses.  I used some that I got on a brewery tour and they were perfect!  Making these is as simple as pouring heavy cream into a bowl and whipping it stiff.  It’s really a delightful dessert that guests will think you spent loads of time in the kitchen for, but like the Rice Krispie Treat commercial, it’s really quite simple.

Lemon Mousse Shots ~ The Perfect Summer Dessert!


  • 25 Nilla wafers, crushed uniformly
  • 1/4 C (1/2 stick) butter, melted
  • 1 1/2 C whipping cream
  • 1 8 oz pkg cream cheese
  • 1/2 C stevia (or sugar)
  • 1/4 C lemon juice (about 1 lemon)
  • Mint, for garnish if desired


  1. Mix the Nilla wafers and butter until wafers are uniformly moist. Place 2 teaspoons in the bottom of each glass and press firm. Set aside.
  2. Place the whipping cream in a bowl and whip using a stand or hand mixer. When stiff, remove to another bowl.
  3. Place the cream cheese in the previously used bowl. Whip until smooth.
  4. Add the stevia and lemon juice. Whip again until fully incorporated.
  5. Fold the whipped cream into the cream cheese mixture, a little at a time, until completely folded in.
  6. Pipe into cups using a pastry bag and star tip, or a plastic zippy bag with a corner cut off.
  7. Refrigerate to set the mousse up. Serve cold.

That’s right!  You can freeze the leftover Lemon Mousse Shots filling, or just make up a batch and freeze it.  It’s a great mock ice cream that is refreshing and delicious right out of the freezer on a hot summer’s day!
