Lemon Raspberry Crunch Bars are unique in that they take just a few ingredients, which are probably in your pantry right now, but they taste like they came from your favorite bakery. The base of Lemon Raspberry Crunch Bars is Bisquick. That old standby baking mix is great for these bars! To bulk it up and add a wonderful chewy texture, oats are added. Brown sugar adds amazing sweetness and softened butter holds it all together. What brings in the lemon and raspberry flavors are freshly grated lemon zest and seedless raspberry preserves. They all blend for the perfect sweet and tart dessert in Lemon Raspberry Crunch Bars.

Lemon Raspberry Crunch Bars

Ingredients

  • 2 C Bisquick baking mix
  • 1 C oats
  • ½ C butter, softened
  • ¾ C brown sugar
  • ¾ C raspberry preserves
  • zest from 1 lemon

Instructions

  1. Heat oven to 400°F.
  2. Spray an 8x8 or 9x9 baking pan with nonstick cooking spray. Set aside.
  3. In a bowl, mix the baking mix, oats, butter, and brown sugar until crumbly and well incorporated.
  4. Press half of the dry mixture into the bottom of the pan.
  5. Top with the raspberry preserves and sprinkle with the lemon zest.
  6. Sprinkle the remaining dry mixture on the top and press lightly.
  7. Bake 25-30 minutes, until golden brown.
  8. Cool completely before cutting and serving
