Loaded Baked Potato Soup is one of my favorite soups of all time.  It is warming and comforting.  It is so easy to make and you can make it with leftovers.  Just bake 4 extra potatoes when you make baked potatoes, and within the week, you can also have amazing Loaded Baked Potato Soup.

Loaded Baked Potato Soup

Loaded Baked Potato Soup

Ingredients

  • 8 Slices of Bacon (cooked crispy and crumbled) (or use leftover bacon bits)
  • 3 Tablespoons of butter
  • 2 and a half Tablespoons of flour (I like to have a little more fat than flour)
  • 3 Cups of Milk
  • 3 Cups of Chicken Broth
  • 4 Large Baked Potatoes (Baked, Peeled and Cubed)
  • 1 teaspoon of granulated garlic (or garlic powder)
  • 4 Green Onions, white part separated from green part and all chopped
  • 1 1/4 cup of cheddar cheese (divided)
  • 1 Cup of Sour Cream
  • 1 teaspoon of salt (or salt to taste)
  • 1 teaspoon or more of fresh ground black pepper

Instructions

  1. In a stock pot or Dutch oven, melt the butter over medium heat. Whisk in flour until smooth.
  2. Add the white parts of the onions and continue to stir over medium heat until you get a slight bit of color on the flour. (The flour mixture "Roux" should look like a very, very light caramel).
  3. Gradually stir in milk and broth whisking constantly until thickened. Stir in potatoes, half the cheese and the green parts of the onions. Bring to a boil, stirring frequently.
  4. Salt and Pepper to Taste
  5. Reduce heat, and simmer 10 minutes.
  6. Serve topped with bacon, cheese and sour cream.

Pretty simple, right?  The entire soup comes together in about 20 minutes MAX!  I can’t believe how amazing this tastes and how quickly it comes together.
