What Makes Loaded Mac n Cheese Loaded?

Homemade cheesy goodness, pasta, and the odd addition of Italian seasoned diced tomatoes, and you have a phenomenal bowl of Loaded Mac n Cheese.  I start with large pasta shells.  Not the kind you can stuff, but the ones that are about the same size as a commonly loved mac n cheese box brand.  Then I brown some lean ground beef to add not only some protein to the mix, but a great flavor that you don’t normally find in macaroni and cheese.  Two cans of Italian seasoned diced tomatoes add an earthy and tangy flavor, almost like a salsa, but without the spicy heat.  And last but not least, a delicious homemade cheese sauce that will knock your socks off.  It starts with cream cheese, and finishes with cheddar and Monterey jack, giving you a phenomenal creamy cheesiness that you will wonder why you buy the stuff in the box!

Loaded Mac n Cheese ~ Skip the Box and Go for Homemade!

Ingredients

  • 1 lb large sea shell pasta
  • 1 lb lean ground beef
  • 4 oz cream cheese
  • 1/4 C (1/2 stick) butter
  • 1 T flour
  • 2 C milk
  • 1 C (4 oz) Monterey Jack cheese, shredded
  • 3 C (8 oz) Sharp Cheddar cheese, shredded
  • 1 can Italian seasoned diced tomatoes, drained

Instructions

  1. Heat a stockpot of water to boiling. Cook pasta until nearly done, but slightly crisp in the middle. Drain and place in a large ovenproof bowl.
  2. Heat oven to 425 degrees F.
  3. Brown the ground beef and drain. Mix with the pasta.
  4. In a medium sauce pan, melt the cream cheese and butter over medium heat, whisking to incorporate. Add the flour and whisk, cooking for about a minute. Add the milk slowly, continually whisking. When the mixture begins to steam, add the jack and 2 C of cheddar cheese, stirring until melted.
  5. Pour the cheese sauce over the pasta. Add the tomatoes and stir. Sprinkle with remaining cheddar cheese.
  6. Bake 30-45 minutes, until browned and bubbly.
  7. Serve hot.
