I’ve had some pretty awesome biscuits at fast food places, but my ultimate favorite, when I can find one, is the Loaded Omelet Biscuits at Hardee’s.  Since there are no Hardee’s anywhere near where I live, I decided to make these delicious treats at home for my family with a few common ingredients I keep in my kitchen.  Loaded Omelet Biscuits are full of everything you love about breakfast.  Crispy bacon, tender sausage, eggs, and cheddar cheese are nestled on a freshly baked buttermilk biscuit, giving you the best of breakfast right in your hand, for an on-the-go start to your day.

Choosing Ingredients for Loaded Omelet Biscuits

I start my Loaded Omelet Biscuits with turkey bacon, to save on the fat.  It’s great in recipes because you get the smoky salty flavor, without all the grease.  Paired with a great turkey sausage, it makes my Loaded Omelet Biscuits not only tasty, but just a teensy bit healthier.  Fresh eggs holds it all together, and slices of sharp cheddar cheese melt over the top, giving the whole thing a bright flavor.  I cheat with the biscuits and use ones from the refrigerator section, saving me time and energy in the morning.  All together, these Loaded Omelet Biscuits are a favorite in my house, especially on busy mornings.

Loaded Omelet Biscuits


  • 1 tube jumbo buttermilk refrigerator biscuits
  • 12 slices bacon, fried crispy and cut into pieces
  • ½ lb sausage, browned and broken into small pieces
  • 12 eggs
  • ¼ C milk or half n half
  • salt
  • pepper
  • 2 T butter
  • 8 slices cheddar cheese


  1. Bake the biscuits per the instructions on the package.
  2. In a bowl, whisk the eggs and milk. Season with salt and pepper.
  3. Heat a saute pan over medium high heat. Melt the butter and add the egg mixture.
  4. Sprinkle with bacon and sausage.
  5. Mix with a spatula and cook until the eggs are firm but not overly dry.
  6. Split the biscuits and top each bottom piece with eggs. Add a slice of cheese and the top of the biscuit.
  7. Serve hot.

Making Loaded Omelet Biscuits Even Faster

If you are short on time in the mornings, never fear!  You can still make Loaded Omelet Biscuits even faster!  Precook your bacon, sausage, and biscuits.  In the morning, pop the biscuits in a 375 degree F oven just to warm them.  Wrapped in aluminum foil works great.  Spray a flat microwaveable bowl with cooking spray and add 2 eggs whisked with 2 T half n half or milk, and the bacon and sausage.  Cook for 1 minute, 30 seconds, until the egg is firm.  Place that on the heated biscuit, top with cheese, and you are all set to go!  Loaded Omelet Biscuits are perfect for that on-the-go family.
