Meatless Monday: Mini Pizzas

Everyone loves a good pizza.  But if your house is like mine, everyone loves a different type of pizza.  So, I came up with a way to make pizza that everyone can make their own, and we can have a great meal with minimal fuss.  There are two ways you can make this.  The first is with an easy to make homemade dough.  The second is fast and easy, using canned biscuits as the dough.  Either way you make these, they are as amazing as you like them.

 

Mini Pizzas

 

Ingredients

Either 1 can of biscuits or 1 batch of pizza dough (follows)

1 jar of your favorite pizza sauce

All your favorite toppings

1 pkg shredded mozzarella cheese

 

Preheat your oven to 425 degrees.  Using a nonstick spray or olive oil, coat the cups of a muffin tin or large muffin tin.

Flatten out a biscuit or a golf-ball sized piece of dough.  Place in a muffin cup and stretch to fit.  Fill with sauce and your favorite toppings.  Top with cheese.  Repeat for the rest of the muffin cups or until everyone has made theirs.

Bake for about 15 minutes or until the crusts are golden brown.

 

Gently pry out with a knife and fork.  Eat and enjoy!

 

Pizza Dough

This dough can be used for small pizzas or stretched out on a pan for a large pizza.

1 pkg active dry yeast

1/2 t sugar or honey

1 1/2 C warm water

1 t salt

2 T olive or canola oil

3 1/2 C all-purpose flour

 

In a large mixing cup, sprinkle the yeast and sugar over the water.  Set aside and let foam for 10 minutes.

In the bowl of a mixer, add 2 1/4 cups flour, salt, and oil.  Add the yeast mixture and mix with a dough hook.  Once the flour is incorporated, add more flour, 1/4 cup at a time, until the dough pulls away from the bowl and isn’t tacky.  Continue to mix/knead another 4-5 minutes until the dough is elastic.

Grease a separate large bowl.  Add the dough, cover with plastic wrap and a towel.  Set in a warm place to rise until double, about 45 minutes to an hour.  Punch down and use as instructed above.
