Miso-less Soup

Ingredients

  • Red and yellow bell peppers, chopped
  • 6 oz mini bella mushrooms, sliced thickly
  • 1 pkg firm tofu, cut in 1/2 inch cubes
  • 1 8 oz pkg edamame, shelled and thawed if frozen
  • 1 T black bean garlic paste
  • 32 oz vegetable stock

Instructions

  1. Place the stock and bean sauce in a stockpot. Add all the cut up veggies and simmer 20 minutes. Serve with your favorite sandwich or on it's own.
