Meatless Monday ~ Spring Veggie Biscuit Quiche Recipe


  • 1 C dry cottage cheese
  • 2 eggs
  • 1 C Swiss cheese, shredded
  • 3 baby bella mushrooms, diced
  • 2 green onions, sliced thin
  • 1/8 C shredded spinach
  • 10 asparagus spears, ends trimmed, blossom end cut 3 inches long, the rest of the stalk diced
  • 1 can refrigerator biscuits


  1. Heat oven to 425 degrees F.
  2. Press the biscuits into the cups of a muffin pan.
  3. In a food processor or blender, pulse the dry cottage cheese and eggs to a smooth texture. Stir in the Swiss cheese.
  4. Place a bit of each veggie in each of the biscuit cups. Top with the cheese mixture.
  5. Bake 15-20 minutes, until quiche is firm and golden brown.
