Sometimes, you just don’t have enough time to make a meatloaf.  You had the best intentions, but it just didn’t happen.  I get it.  I’ve been there.  And then I thought, why can’t I make burgers with that same wonderful meatloaf flavor?  They cook faster, and I could have dinner on the table in less than half the time!  Meatloaf Burgers were born.  My family loved them and now, they are the most requested burger in my repertoire.  Meatloaf Burgers are amazingly easy, and are fast to put together in a pinch.  On a bun or off, they are pretty darn tasty.

Meatloaf Burgers Any Way You Like

The easiest way to make Meatloaf Burgers is by using your favorite meatloaf recipe and forming it into burgers.  If you don’t have a favorite meatloaf recipe, I’m going to share my super secret recipe with you.  But you can’t share, ok?  Ok!  I start with ground beef or ground chuck.  Leaner meats are nice, but they will leave you with a dry meatloaf or burger.  I use one egg for each pound of meat I use.  It’s a great ratio that produces the best results for me.  To season the mix, I add oregano, basil, minced garlic, salt, and pepper.  All normal, everyday ingredients.  And then there’s my super secret ingredient.  I add a couple tablespoons of milk or half n half to my breadcrumbs before I add them to the meat.  It sounds kind of weird, but really, it’s an amazing way to add moisture without altering the flavor.  Once the Meatloaf Burgers are perfectly cooked, I top them with caramelized onions, garlic, and even bleu cheese sometimes for the best burger in town.

  • 1 lb ground beef or ground chuck
  • 1 egg
  • 1 t dried oregano
  • 1 t dried basil
  • 1 t minced garlic
  • salt, to taste
  • pepper, to taste
  • 2 T half n half
  • ½ C bread crumbs


  1. Mix the ground beef and egg until completely incorporated.
  2. Sprinkle the herbs and seasonings over the meat mixture. Mix well.
  3. In a small bowl, mix the bread crumbs and half n half. Allow to sit for 5 minutes to absorb.
  4. Add the bread crumb mixture to the meat and mix well.
  5. Form into 3-4 patties.
  6. Grill, broil, or saute to desired doneness.
  7. Serve alone or on a hamburger bun with your favorite toppings.

Making Meatloaf Burgers for Later

Did the butcher have ground chuck on sale this week?  Pick up extra and make Meatloaf Burgers for the freezer!  I love to have a few extras for those days I just don’t have the energy to make anything.  Place them on a rimmed baking sheet lined with waxed paper or parchment and freeze.  Once they are frozen, wrap them individually in some plastic wrap to prevent freezer burn and place them in a freezer plastic zippy bag.  You’ll have Meatloaf Burgers in the freezer ready to bake, grill, or saute on a moment’s notice!
